    I got this system cause I didn't know how to freehand sharpen. Wonderful system. Then I bought a digital copy of Beyond Razor Sharp for $19 and a $18 Smith's tri-hone and within a week I was able to get edges equally as sharp as the edge pro. Now two months later I am getting edges way sharper that I can whittle hair off of. I previously could take a butter knife and actually make it duller, so if I can do it anybody can. Just learn to freehand. But of course I'm not bashing the EPA, it's a wonderful system, but you can't beat the price of learning to freehand, the pride of learning, and the superior edge.

      How is it a superior edge if your sharpening at the exact same angle using the exact same grit stone?

      I never said I was better or superior. I just like the results I get from freehand (and the lower cost) versus these systems.

      Matthew Howard The only downfall with systems like the kme and the edge pro is their limited ability to sharpen larger knives.
      And when I say large, I'm talking about 10", 12", etc.

    I prefer the lansky sharpener because it's cheaper and it has a clamp to hold the blade firmly.

    I for one love how nutn makes long videos. A lot of other channels do short videos on the same products but when nutn does a video I feel like there is nothing that was left out.

    I finally decided to buy this sharpener and am happy that I did. It really enables anyone to get super sharp blades. The only thing the kit was missing was a drill-stop collar so that you can correctly maintain the edge angle when you switch stones. Some people think the price is high, but if you buy quality knives, you should be able to maintain a quality edge on them.

    Looks like this thing could use a clamp of some kind to hold the blade in place, but that might add more time to the sharpening process!

      I tape a small but very strong magnet under the table to hold the knife flat . you can still slide the knife if it's long . works like a clamp

      ***** I got mine at true value hardware . "super magnets" . they are the size of a penny and 5 of them are stuck together . you can pull them apart (if your strong) and just use 3 glued under the table . they are so strong that they have a warning to keep away from children . I don't know how they make em so strong . $7.00 . ended all my problems !

    Outstanding demo of this device..I went back and watched the "company" demo, Ed doesn't stress the integrity of the angle and that's where it's at! I was in a position to collect "discarded" quality and pricey knives (Benchmade, Spyderco, some Cold Steel, Buck) because the former owners knew nothing of sharpening a knife. Thanks again.

    Between the thumbstud, the angled blade, and his constant "Ooop! fucked it up again!"... I've heard great things about this sharpener, but he doesn't instill confidence.

    It took me so long to learn how to get a good edge freehand...
    And oh my god that's expensive. I'll stick with my Arkansas stones.

      I'm contemplating getting a straight-razor and a full set of sharpening stones up to 6000 grit, just to see how good an edge I can get.
      The only things that are discouraging me are the price and the likelihood of finding out how horrible I really am at sharpening knives.
      As for stones themselves, I can't say I've ever used a Japanese stone. Only various retail brands, a couple ceramics, and my Arkansas stones. I know Arkansas recommends oil, but I use slightly soapy water... Do Japanese stones handle water better?

      Dash Lambda amazon, this thing, just up to 1500 grit, 20€ i got it, awesome, and you can make your own stones, buy a small stone, make a metal braket for it, just clamping the stone in does the job, i epoxied it in, just for the sake of durability, up to 6000 grit, for also less than 20€ the new stones for this

      That isn't the Edge Pro Apex, probably some knock-off which may do the job but I'm sure I could make something worlds better. Can't get the Apex that cheap.
      As for the stones, those are really cheap stones. 6,000 grit for less than $80 (Yeah, I know you weren't using dollars.)? Either it isn't 6,000 grit or it wears out the first time you use it.

      Stones are the cheapest abrasive you can get, from very cheap like the standard oilstone you can buy at your local... probably walmart for dollar users, you can get it online, handy things for less than a dollar i'd say (yes very small, but i was talking about very small, to use as stones for the jig) to arkansas stone which you can get for as said less than 20, stupid it would be to buy waterstones, brittle at that size and somehow wear unevenly when used in the jig, but yes, pretty decent results, but dude yeah, by hand it isn't too hard, or what i prefer now, sanding paper

    My name is John Smith, I am a covert black ops navy seal, who skipped buds class because I had to much skill. My way is the best way to sharpen. I take the blade, attach it to the apex, then use my pinkie toe to move the stones to the blade. then I wack it with a crowbar until it gets a mirror polish, then I employ magical fairy pixie dust to take it to its true sharpness. (Sharp enough the cut through air) MY WAY IS THE BEST, AND IF YOU DONT DO IT YOU ARE AN IDIOT.

    I have been 'free hand' sharpening for a couple of years. I will be the first to admit that I have yet to obtain a perfect edge. This can be quite frustrating due to the time and effort. An easy to use, repeatable performance and inexpensive; two out of three is acceptable.

    Hey, good video! I learned a lot about a device I am researching. I've always sharpened my knives manually. I cook for a living so I sharpen more often than the average knife monkey. I am by no means an expert. I agree that keeping a consistent angle is the most important thing for people to understand. I struggle myself and that is why I look at something like this.
    However, I think that wiping off your knife during the process is counter-productive. The "slurry" that develops while we sharpen is really what does a lot of the work. The stone-paste is your best friend when it comes to sharpening. It is what is doing most of the work. I challenge you to not wipe a knife clean til done and see if you can see a difference. Good Sharpening!

    That is an incredibly sharp edge. Sharper even than if you put a back bevel on it. The back bevel simply strengthens the edge allowing for longer intervals between sharpening. Having many knives achieves the same results with the ability to keep each one even sharper! Sweet Vid. thumbs up!

    I have been looking at buying this for a year before the the first time I watched this video. The sticking point for me was teh price and I was hoping that would have gone down by now. I just watched this video again and said JUST GET IT! So i did. I bought it from the inventors website and in the box that said "How did you hear about us" I put "Nutnfancy" It should arrive here in Boston on Thursday...Cant wait!

    Back in the 1960-1970s, I worked as a histology technician. We chopped the dead into tiny pieces. Pieces as thin as the nucleus of a single cell. Really thin.
    Our knives could split a blonde hair in 4 pieces. We got that edge on Arkansas stones and strop, by hand. The stone put a primary edge on the blade, and the strop would provide a 1-2 degree steeper secondary bevel.
    None of this is to suggest this is a criticism, but rather a shout out for the secondary bevel. You might want to try it.

    Hey Nutn.. great vid as always!! I am a woodworker and use hand planes. The edge on those tools are critical!! I use Norton water stones in 1000/4000 and 8000. The stones take the same belly over time. A cheaper and very effective option for the base/stone leveling surface is a 12"x12" granite tile from the HIC (home impov cntr). they are flat polished. To prevent slipping.. a damp terry towel between the tile and slick laminated counter top will work!!

    Excellent info and demonstration! Thanks so much! I have a nice Kershaw I've never tried to sharpen because I knew I'd never get it right. I have an Old Timer, with a FINE edge, all hand done by moi, I use for gutting deer. I'm anxious to see what the EPA will do for it! AWESOME video nutn!

    Nutn at one of my jobs (Hospital) I met a guy that comes from a major company and he regrinds scaples for the OR at the local hospitals. His edges are dangerously sharp and he doesn't charge L.E. or Mil to redo them if you bring them to him when he's at the Hospital (once a month). Great guy and by God his edges will split hairs.

    I used one for the first time last night. Wow! Far easier than I expected. Holding the knife in place and flipping it took only a few minutes to get used to and is far more convenient than using one of the cheaper clamping systems. Took it down to 600 grit, a few passes on the strop and it really pops hairs. It's a little challenging to get small recurves.

    This is really interesting. Thanks for introducing me to this system. The only fixed angle sharpener I've ever used is the Lansky system. It's worked pretty well for me. The advantage is it locks the blade into place for the duration of the sharpening session. The disadvantage is, you have to really mess with torquing down the clamp and it's a little clumsy. You can't just switch knives very easily.

    This video is a few years old. But I bought an Edge Pro last year. Why? Because like Nutnfancy, I just do not have a knack for sharpening knives. With this sharpener I actually do get great results. I still have a lot to learn though. And practice makes perfect. This video is a great intro to the Edge Pro, and using it. Thanks for the info Nutn. I watch this video every once in a while just to refresh/refine my technique.

    You did everything right from what I can tell compared to Ben. I think he wipes his stones off after he washes them though. *shrugs* Biggest thing with any sort of system is to do what works for you. Keep up the good work. You just make me want this thing more now. I believe Ben will sharpen one knife for you with the Apex to prove how well it works according to his site if he's still doing that. Amazing system.

    I hot glued 4 neodymium magnets under the base. It holds blades up to an Ontario SP50 with pretty good retention.

    While watching the 3 recent knife videos i was thinking to myself "not much of a knife guy, but lets see whats up." Out of curiosity followed the annotations to this video, and suddenly im looking around the room at my knives thinking i might have to starts saving up $245 and become a knife guy. As always, a fantastic video, and who doesnt absolutely love watching stuff get done?

    Hey Nutn,
    If you are having trouble keeping the blade stable, go to Home Depot and buy some of their super magnets. I have a 2x5 stacked row of them underneath, and I hot-glued them down. HUGE improvement to the system. Now some knives can just sit on the flats without me even holding them.

    Due to my country's strict laws, most knifes are illegal. In search to find a proper knife to replace my current folding knife, I found the Spyderco Pingo to be the better choice. Thanks for making me aware of proper brands!

    idk if this applies to this sharpener but when you use a whetstone you're suppose to keep the "shavings" on the stone until you're done using it, its actually what is doing some of the sharpening if im not mistaken. but i could be wrong.

    Its 8 am here where im watching this video and sadly I do not have a blade on my person as I sit at my computer watching another great video from nutn....I do however have in front of me a very awesome tool called a spoon! It helps me eat my cereal with great efficiency! I tried a knife but as you can imagine it was a disaster (not the recommended tool for this POU)!

    Your timing couldn't be better. I put in my order for my EPA kit 4 just before you released this vid. After researching the crap out of sharpening systems, EPA won. Your vid further supports my thoughts on it. No buyers remorse this time! Well except that $245 could have gone into a sick HEC or even a PF9. Maybe next time!

    Pretty ingenious contraption. Glad to see the Hold Out (personal fav EDC/tac) amongst your group of goodies. Found the handle on it pretty easy to custom shape with a file, just did a video showing the outcome-highly recommend. Great video as always, thanks for keeping us all in the loop of your latest greatest finds!

    I have always used smiths sharpening systems but they often leave much to be desired. I agree with a lot of the comments though that some kind of clamp would be nice to hold the knife in place instead of having to press down on that "flat" the whole time. Many might say that a clamp system would scratch up the sides of the knife but honestly that's to be expected... It's a knife, it's supposed to cut things.

    I wonder if there were a top plate overhanging the gate a little so that there would be support top and bottom, lightly clamping the blade down, would work for me. My hands aren't all that steady. I have trouble even holding binoculars steady.

      It's the stones that cost money. All you really need is two. This contraption may look cool but you can get a sharpener with a flexible belt that produce convex bevels much cheaper. They will also give you a more durable blade. This thing is awkward and kind of unsafe. How they are getting 2-500 bucks for these things is beyond me

    I'm actually watching this vid in my flannel pajamas, and even though I have no pants pockets, I have my Spyderco Pacific Salt (3.75in blade). And it's sharp. So I don't know if I should be proud or embarrassed...

    On my person I currently carry a Kershaw leek and a Victorinox super tinker. In my shoulder bag I carry a Victorinox Swiss tool. Yes I keep them sharp. So far my Smiths pocket pal works really well. It's great for a compact sharpener for your pack. For home use I am looking at getting a spyderco sharp maker.

    Great vid as usual. The cost of this unit is really out there of me. I have the Spyderco Sharpmaker and find that even with my mitts I can get a consistant razor-blade sharp edge...even on my scissors. I picked it up for about $50 and it has served me very well so far.

    Bought mine and love it. Use it all the time. The only downside is the fact that my friends are always having me sharpen their blades!

    because for a longer knife (say a kitchen chopper) you need to be able to move the knife so that the section you are sharpening is always being supported by the platform. this allows for constant edge angle along the entire blade as well as supports the part of the blade that is taking the downward force. I have however seen a store sell a high powered magnet for holding the blade more securely.

    That's what sets him apart. It's the details. There are a million and one people on youtube who can do a 10 minute knife review, but they miss out details that might make or break a product for some people.

    Excellent video of how this sharpener works. It looks like a quality product, and once you get the hang of not having your blade clamped down then it will rock. I just can't see myself shelling out $245 for a sharpener!!!!!I'll keep using my $35 lansky system, plus it clamps the knife down.

    THANK GOD YOU DISPLAYED THIS ITEM BECAUSE I WAS TIRED OF USING THE STONE AND THE BENCH WHICH HONESTLY I WILL NEVER GET TO GET IT AS SHARP AS GOING TO A SHARPING STORE. GOING TO BUY IT AND I DON'T CARE ABOUT THE PRICE BECAUSE I GUESS IT PRETTY MUCH WORTH IT TO ME. NUTNFANCY KEEP BRING THE VIDS WE LOVE THEM. I CAN SIT THRU DINNER WATCHING YOU DISPLAY YOUR STUFF.
