I grab a table spoon rinse it with cold water and press down each scoop. This is my hack for a thin and crispy cookie as I prefer a not so doughy cookie.
i made this and it is SOOO good. I did something wrong with the batter because it took double the time to cook but it still turned out soft and crispy at the bottom. thanks

Of course, I think i had the correct amount of butter since i used a measuring cup. I kind of eyeballed the brown sugar but i don’t really know if that would change anything. I might have been the flour because eggs all have the same quantity and vanilla optional. For the flour i put in the recommended amount and it didn’t look as thick as yours so i a lot added more until it as thick. Maybe it was that?
Thanks for providing more info. The omission of salt wouldn’t affect the texture or bake time, I suspect it may have been the brown sugar. Since it has a lot of moisture (compared to granulated sugar) adding a bit too much could account for why you needed extra flour. I’m also a little heavy handed with my flour measurements (my weighed cup is closer to 140g rather than the standard 120g) which also may explain why you needed more flour. Thanks for providing feedback, it helps me provide better info in my recipes and videos
This recipe will make 16-20 cookies depending on the size of your scoops. It can also easily be doubled for a larger batch. My apologies for the late response!

I just did this recipe, but didn't have any eggs, so I subbed 1 tablespoon of yogurt and 2 tablespoons of water. They turned out nice and fluffy!

Hi! Yes you can definitely use unsalted butter instead, I would add an additional 1/4 teaspoon of sea salt to balance out the sweetness!

Hello Jessica! You could use regular salt instead, and I’ve made these with almond extract instead of vanilla and they were still tasty!
I used honey as a substitute for vanilla extract. Also used regular salt. They were so good!!
can you make this with a little oil instead of the egg?
I haven’t tried it with oil unfortunately. If you do try it out I would love to hear how/if they turn out!

Hi! They should turn out okay without the yolk, I would decrease the flour by 2 tablespoons if you’re doing egg white only!
