      I can think of a million different ways to make this better. This is a very basic recipe needlessly complicated and under seasoned. The Cubans make a similar potato with a picadillo ground beef filling that is out of this world.

    I use small 1/4” cubes of different kinds of cheese and 1/8” diced jalapeño all mixed in. Saves a ton of time trying to wrap the sticky potato around the cheese. Then I just use a #30 disher to scoop out all the potato mix onto parchment lined baking sheets. Then pop them in the freezer for a bit. It makes the breading process way easier if they’re firmed up a bit. This is the only way I’ve found to make these in mass quantities.

    If not for the potato, I would say that this reminds me of the cheese on a stick that you might get at a fair. I have seen those with white American cheese or Swiss (sometimes you can choose between them). They would have the same cornmeal breading as a corn dog. Might be fun to make a variation on that if this would work. I also feel like the potato could use some dill or chives or something. Maybe a packet of ranch seasoning in either the breading or the batter? I was going to suggest maybe putting it into the potatoes itself which might make sense, but I fear it would dry it out too much when it already seems dry.

    This is a fun take on Coxinha, a Brazilian treat, except the Brazilians use Yuca instead of potatoes and the filling is shredded chicken, spices and catupiry cheese, a cream cheese. So good, it's like little fried balls of Sin.

    Gotta season some of those ingredients. Flour, potatoes, and eggs all needed a little extra kick to make everything better. Some herbs as well, either fresh or dried - hell, both wouldn't have hurt; parsley, oregano, thyme... something. I love the idea, it just needs a bit of brainstorming.

      ​@@micahhawkins8233 The most common cheese is Mozzarella, but there's some places that uses white cheese or a mix of Mozzarella and Parmesan.
      We season the dough with salt and oregano or parsley, some places use black pepper too

    This may be a bit of a culinary cop-out, but how about this-- crisp some bacon, chop it up, add it, some sour cream, and some chopped chives into the potato mixture. Use a sharp cheddar cheese for the center. Go with a traditional breading setup. REconstructed loaded "baked" potatoes!

    They're unlikely to have used peanut oil and the type of cheese likely is to have a big impact on overall flavor too. If it was like a French/Swiss Emmental you would definitely get a lot more salt.
