What great choice of ingredients for the dressing. Italian parsley is perfect to let the mild flavor of the scallops shine through.

2 Tb olive oil
1 Tb fresh parsley
1/2 t crush red pepper
1/2 t salt
1/2 t pepper
1 lemon zest and juice
