I built one of the Gravityfeed smokers and use a Heatermeter to control temps.

@SmokerBuilder Yeah, I been with the project since it was known as the Linkmeter. Bryan Mayland did an awesome job with the design and programming. I designed the Adapter Board to work with a Rotordamper.
On your double pan Gravityfeed smoker, I use a 30cfm blower and the HM and it will hold perfect temp for hours on end.

    Very informative content.
I watched the video from start to finish but a little disappointed not to see you working the Argentina style direct that’s on the cover of this video I plan on getting a few sheep next year and would enjoy seeing you do a video on that cooking style.

@@bigbendyuccacompany3955 totally understand, you should actually check out Al Frugoni’s channel
He is the greatest at that style of cooking

@@SmokerBuilder I did check out Al’s channel and he only has seven videos and none of them really talk about that method of cooking it just shows him cooking Might be something for you to explore and make a video about someday. Building one does not look too complicated or hard.

I’m collecting the stuff to put together a 500 gallon offset. I have a 500 gallon tank and a 120 gallon upright to use for the burn chamber. Was considering insulating it, to conserve wood, but now I’m thinking I might not. What are your thoughts on insulating the floor of the main cook chamber? Would there be any advantage or disadvantages? I’m really liking your channel.

great question! I have never noticed any significant improvement insulating the bottom. I know Pig Iron Patina speaks highly of this method though.
