Yep, yep and yep Dick! I have and use a smoker tube and you definitely don't put it directly under anything. I usually let my cheese rest a minimum of 2 weeks. It's also great for smoking salt and other spices! Great video!👍🍻
That's interesting about the 100゚ line of demarcation. I would have thought at a 100゚ it would melt. It certainly would melt if you put it on a sidewalk and it was a 100゚ outside
Ya, the 100 is the mark I have always heard, but since I do it in the winter mostly it has never been a problem, especially with my offset cold smoking set up that I normally use.
Great video. I like that your tube was hexagon (?) shaped. Mine is round so I usually brace it with a couple pieces of coal or ash to keep it from rolling. But I a little disappointed that I didn’t get any cheese in the mail, especially that Jarlsberg!!

After the resting period it turned out really tasty-maybe not as eye appealing as some other that i have made but really good!

Thanks for dropping by and I will have to try the salt, we have always done that in our bigger smoker as an add on, so hit or miss when we have it.
I have a device much like that,...but use wood chips. They work ok.
It is quick and easy. I would not say it replaces a smoker burning real wood but that is a lot more work!
