- Chingri malaikari is an iconic Bengali prawn curry made by cooking large tiger prawns (bagda chingri) or giant freshwater prawns (golda chingri) in a super-subtle, super-creamy coconut-milk sauce. Don’t be fooled by the elegant appearance of this well-loved Bengali treat-chingri malaikari looks deceptively complicated to cook, when in reality it is easier to make than even chicken or egg curry!
The name of this chingri macher recipe bears somewhat of a double meaning. ‘Malai’ meaning ‘cream’ recalls the coconut-milk base in which the prawns are cooked. However, this prawn recipe seems to have made its way into Bengali kitchens through contact with Malaysian traders; so ‘malaikari’ is actually ‘Malay’ curry, which over time became ‘malai’ curry.

My mom makes it without onion paste,she likes it with fine slices,and also just one pressed coconut milk and few amount of 'kora narkel',also without even curd.....And it's amazing! The mild sweet flavour of coconut and the hot spices perfectly balances the dish!

Made this with my girlfriend, easily the tastiest thing I've made in my life, she loved it, which is a big deal because she grew up in Kolkata. :)
I only made one change, as I didn't have freshly grated coconut. I used store bought coconut milk and instead of using the thin milk to de-glaze the pan I used a stock I made with the prawn shells.

I wish I had seen this wonderful video four years ago when my dad came to visit and I thought I would surprise him with a Googled version of Chingri Malaikari.
It was a foolish endeavour as my mother's Chingri Malaikari is pretty legendary. After I served the food on the dinner table and he tasted his first spoonful, he said,
"This is just lovely!"
And then he added,
"You know what you should make?"
"What?" I asked.
"You should make Chingrimacher Malaikari."
I said, "This IS Chingri Malaikari!"
He smiled at me and went..."Aww Its lovely whatever it is, but dur, this is not malaikari."
They are still laughing in Kolkata.

My caldini inspired Malaya kari, with continental twist:
From Prawn Malaya kari to its Bengali version to a continental twist.
I am inspired by the Goan Caldini and have adapted the recipe partially- dry roasted coriander, cumin, peppercorn, cloves, dry red chillies, cardamoms, half grated coconut. Made milk with warm water- first extract and second extract.
Made paste of two onions, two inch ginger and ten pods of garlic.
Heated three tbsp mustard or olive oil in a wok. Added a pinch of turmeric and a tsp kashmiri red chilly. Sautéed onion, gg paste till oil separates. Added second coconut, spice extract.
Now added around ten sauteed medium tiger prawns and cook covered for five- six minutes. Add first coconut spice extract. Simmer for 3 minutes. Add three tbsp fresh cream mixed with one tbsp cornflour. Homogenise. Garnish with fresh chopped parsley.

এই তো গুরু, এই তো। এদ্দিনে আমার মনের মত লোক পেইছি। চিংড়ির খোলা ছাড়ালে যে মালাইকারির আদ্দেক মজাই নষ্ট সেটা আমি কাউরে এদ্দিন বোজাতে পারতুম না
খোলাটা ছাড়ালে একটু ঝোল-টোল বেশি ঢোকে ঠিকই, কিন্তু চিংড়ির গন্ধটা একটু কম হয় মনে হয়। তাছাড়া স্রেফ দেখতেও এটা বেশি সুন্দর লাগে। তবে নেমন্তন্ন বাড়িতে খোসা ছাড়িয়ে খাওয়া একটু ঝক্কির বলে অনেকে হয়তো ছাড়িয়ে পরিবেশন করে।
খোলা ছাড়িয়ে আবার মালাইকারি কী? কে খোলা ছাড়িয়েছ করেরে মৈনাক? খপর দিস, একহাত দেখে নেবো হনে ;)

It looks funny as she did not cut off the clamps( chengi ) from the two long hands. Ha ha ha.
