I wish you would explain more about this surge tank/air vent. I see the tape and diagram but done understand at all. Is it some kind of system to allow ventilation despite being capsized briefly without water getting in?

Make sure you have enough headroom to prep your food and eat comfortably. It's looking rather cramped at the moment.
