Brilliant video. Great that you didn’t waste the pistachios as I hate wasting. Plus they are so expensive to waste. No good should be wasted in the kitchen

Can I use Matcha tea for the green color instead of the artificial color
Can I use the sifted pistachio in making cakes
You could probably use Matcha for the food coloring, but Matcha will be a stronger flavor and may overpower the pistachio if you use too much.
You could use ground pistachios in a cake, but pistachios flour has no gluten forming proteins so it would be best in a meringue or flourless cake or in cookies.

They were not roasted.

@@barbhenderson2930 Typically traditional gelato contains nut purees in them and is served with nuts more as a topping than in the gelato itself.
But feel free to add nuts to the gelato base as you wish!!!
