+Neck Beard That is if you buy cheap Mirin. Real Mirin is made like Portwine. Ethanol is added at a specific point of the fermentation process, which stops the yeast to ferment the sugars into alcohol, thus more sugar and less alcohol.

Your explanation of why one should cut against the grain was one of the clearest and most succinct explanations of the matter that I've heard. Nicely done. That stated, I don't care how well you sourced your meat; that marinade still would've benefitted from a healthy pinch of MSG!
MSG is anathema to me -- severe headaches + heart palpitations. people have actually TOLD me that it's not the MSG, but i can put 2 + 2 together to = an allergic reaction. for me, there's no such thing as a "healthy pinch of MSG."

Booth Booth Use Ketjap Manis instead of regular soy sauce. It solves the problem completely. It’s Indonesian sweet soy sauce. No need for any sweetener if you use that.

Do you have any tips for achieving grill results in the house without setting off smoke detectors? I usually reverse sear steak in the winter, but flank steak is too thin..

One thing i was always curious about is, if there are ways to cook/grill marinated steaks on a gas grill and still reduce the mess it could make underneath.
Flank steak and skirt steak tend to come in long pieces. Like the one in this video. If you were to lay that piece on a table in front of you horizontally. The grain would run left to right so to cut across the grain you cut top to bottom.
The grain are the lines that run all the way across the top of the meat. Uniformally. Imagine the meat as a highway. The grains would be different lanes of the highway. Just smaller scale.

How about asian spiced marinated 🥩 or sumthin that makes more sense cause the way u said it made it seem like u need “X” amount of asians to marinate the steak. Could you use HOT (chili extracts) Sesame Oil in place of Chili Sesame Oil?

If you add Bourbon to the marinade so that it’s 25% Bourbon, the alcohol tenderizes the meat beyond belief.

I tried 2 parts Sweet N Sour Sauce, 2 parts Stir Fry Sauce, 1 part Soy Sauce.

Likely something mostly flavorless like canola oil. Don't be afraid to use sesame oil or olive oil though, they're both good in this.
