Everything in the viewport is normal, I am using Maya 2022 so maybe that is the difference. I do add a few tools to my shelf but other than that I haven't changed anything.
Yes I skip the UV's in most videos cause its the same process every time. I do go over it step by step in one of my previous videos, check it out if you're interested :) I also upload the UV mapping process to some of my models on my Patreon Page as well :)

Why your Maya viewport seems different, did you change some options? Shadows and color material are darker, and all just looks better

@@EDWARDGLEKOV I dont use any external addons, for the UV cutting I use the 3D cut and sew UV Tool.
