The metallic taste and the deep color is due to the over-cooking of chicken liver. Also, you can't replace curing salt with Himalayan salt because curing salt contains sodium nitrite which acts as a coloring agent as well as a preservative. So cook the livers to medium-rare, use curing salt, cover the top Pâté layer with plastic wrap before overnight refrigeration.
