Making cheese is indeed fun when you are passionate about it, else it becomes very dull. You have to be up at 2:30 am to start working around 3 and it is very tough manual labor (from a woman point of view).

Very sad that nobody talks about how the male buffalo calves are useless for the production for the buffalo milk needed for the buffalo mozzarella and are disposed of relatively quickly after birth. The female buffalo are allowed to live on, but many animals are kept in conditions that are not appropriate for their species. This is very farm-dependent, but in general it can be said that the increased demand for buffalo mozzarella also means consequences for the handling and husbandry of the female animals. Keeping them purely in stalls is the norm, with no access to pasture. At the same time, the animals are very sensitive; they must be constantly cooled from the outside because they have few sweat glands. And in order for them to produce the amount of milk of a certain quality, the use of concentrated feed is very high - which is also not species-appropriate for ruminants like buffalo. But well, the same applies to any factory farming, so that we can all eat enjoy tasty mozzarella, meat and eggs for a small price.

Mozzarella di Bufala (the one made out of buffalo milk) contains a small quantity of lactose so it can be eaten although it's preferable to buy the Lactose-free version. The cheeses that can be eaten by lactose intolerant are mostly hard cheeses because the ageing process decreases the lactose inside the cheese.

It simply is an additional level of protection, not a replacement. I do not know if it's necessary but it's not done out of lazyness. I guess if you have tiny wounds or loose skin you dont contaminate the food with it. Most workers would rather just wash their hands and be done with it, the gloves are seen as a bother to put on everytime.

Local Italian cheeses are the best,in taste,flavour and freshness. If one loves cheese....Italy has hundreds and hundreds of varaities from many different sources,cows,sheep,buffalo,goats just about every city,town and village produces their own original cheeses going back hundreds of years.

Just before Covid shut down everything around the world, I managed to go to Puglia and stayed at a guesthouse in Alberobello and a hotel in Bari. Both of these places had fresh mozzarella which tasted like you were literally drinking right from a cow’s udder. (In the best sense, it was not gross at all) God the Italians really deserve the title of best cuisine.
Yesss, the buffalo milk mozzarella is so legit! It's a shame it's difficult to find/more of a specialty item where I live because the mozzarella made with buffalo milk is the best I've ever tasted! It also helps that I can eat that version of mozzarella without dying, being lactose intolerant and all 😂

Just before Covid shut down everything around the world, I managed to go to Puglia and stayed at a guesthouse in Alberobello and a hotel in Bari. Both of these places had fresh mozzarella which tasted like you were literally drinking right from a cow’s udder. (In the best sense, it was not gross at all) God the Italians really deserve the title of best cuisine.

Yesss, the buffalo milk mozzarella is so legit! It's a shame it's difficult to find/more of a specialty item where I live because the mozzarella made with buffalo milk is the best I've ever tasted! It also helps that I can eat that version of mozzarella without dying, being lactose intolerant and all 😂

@@tianamariee6287 I've read that the milk that is most similar to human milk is camel's or goat's. we drink cow milk because it's easily obtainable and cows already produce other byproducts useful to us, but cow milk is not particularly digestible compared to other animals. so yes, if you're lactose intolerant you might suffer less w animal milk that is not cows milk!
