Jain food is sat in food.we love guj jain food,being a tamilian,.
Nothing is made without behan 😀 I am from Kerala, we use besan very rarely 😊
But they do they use besan sugar ghee dry fruits curds etc north and west and north eastern cuisine and flavours are different in our traditional south Indian cuisine like idli dosa rasam sambhar avial etc no garam masala

But, south India i.e. southern Karnataka, southern Andhra, Tamilnadu & Kerala use lavish amounts of Coconut and curry leaves.
Gujarati thali recipes are very good. Bhindi masala fillings is new i wii try. Tur dal tadka withot garam masala and kokam is used for khatai . Pittod ko hum dahi me banate hai , dokla means idda rice or urad dal ka ho or black paper ya vegitable dhokla ho surat style ka, methi thepla me bajra aata ho ,dahi ,gud bhi to bahut testy banta hai. Thanks
I try bendhi masala.I use to prepare with just groundnut,add little besan must be tasty.Bit need to sprinkle little water so that Besan filling get cooked properly I think.

Gujrati food does not use Tej Patta/Bay Leaf or Amchur or Garam Masala or Kasoori Methi at all. Gujrati Dal is never so watery and uses Cocum not Nimbu ka rass.Infact the Dhokli ki Sabji is not a Gujrati item but is a Rajasthani item called Pitthode ki sabzee. Gujratis make Dal Dhokli which is savoury dhoklis in a typically sweetish and thick Toover Dal.White Dhokla is made with Rice Flour and some Rava/Sooji not just Sooji. Secondly the mirchi powder is sprinkled with black pepper powder / dhania-jeera powder b4 it is steamed. Also in White Dhokla there is no water in the tadha - thats only for Khaman / Yellow Dhokla. Saunf/Fennel is never used in Gujrati cooking except in Undhiyu.
