Hi Steve, I've been smoking chese about 8 years now I'm in Florida also. I wait till the over night temps are around 45° I load up my Retec 700 with cheese and fill a smoke tube and let it smoke all night. It'll give about 5 hours of smoke. You have to keep the cheese cold. The inside of my grill doesn't get over the ambient outside temp because of its size. The reason you want to keep cheese cold is, when cheese warms up it weeps its oil out of it and you end up with different cheese from when you took it out of the package (hence the moisture on your cheese) you dont get that at or under 45. Also if you do it at night it will stay cool without the sun. Warming up the outside of your grill. You put it on before it gets too dark and go to sleep and take it off in the morning and vacuum seal right away and wait at least 2 weeks ... you're right about it tasting like a ashtray if you eat it right away. ... I just wanted to add some insite to the procces of cold smoking Jim A
@ interesting…. Never tried the sawdust. Can you do a long smoke with sawdust? Do you put it in a tube? I’ll have to try it, but not sure about methods and smoke results.
