    Malabar spinach or मायाळू (Basella alba) is a nutrient-rich leafy green vegetable that offers several health benefits:
    1. Rich in Vitamins and Minerals: Malabar spinach is an excellent source of vitamins A, C, and K, and minerals like calcium, iron, and potassium.
    2. Antioxidant Properties: It contains antioxidants that help protect against cell damage, inflammation, and oxidative stress.

    How to make मायाळू pakoras
    Malabar Spinach Pakoda (Basella alba fritters) is a crispy and flavorful snack. Here's a simple recipe:
    Ingredients:
    1 cup Malabar spinach leaves
    1 cup gram flour (chickpea flour)
    1/4 cup rice flour
    1/2 teaspoon cumin seeds powder
    1/2 teaspoon coriander seeds powder
    1/4 teaspoon turmeric powder
    1/4 teaspoon red chili powder (optional)
    1/2 teaspoon ginger garlic paste
    Salt, to taste
    1/4 cup water
    or as needed for flowy batter
    Vegetable oil, for frying
    Instructions:
    1. Clean the Malabar spinach leaves and make small holes onto it using fork.
    2. In a mixing bowl, combine gram flour, rice flour, cumin seeds and coriander seeds powder, turmeric powder, chili powder (if using), and greenchilli paste ,ginger garlic paste
    3. Add 1 tsp hot oil and pinch of soda birthday carb to batter
    4. Add salt to taste and mix again.
    5. Heat oil in a deep frying pan over medium-high heat.
    6. Dip each leaf in the batter and drop it carefully into the hot oil.
    7. Fry the pakodas until they are golden brown and crispy (about 3-4 minutes).
    8. Remove the pakodas from the oil and drain on paper towels.
    9. Serve hot with chutney or raita (a yogurt-based side dish).
    Tips:
    Use fresh Malabar spinach leaves for the best flavor and texture.
    Adjust the amount of chili powder or omit it for a milder version.
    For a healthier version, bake the pakodas in a preheated oven at 375°F (190°C) for about 15-20 minutes, or until crispy and golden brown.
