I work at the second largest mill in all of North America (Russell, KS) and it's extremely similar to this with the exceptions the floors, sifters and other things are not made of wood anymore and the charts they showed are on computers now, not paper. Nonetheless, I was surprised to see not much has changed at all regarding mills in 60 years
