I think a good way to add a little extra challenge, and kinda needed honestly, is to have a save limit. You can only quicksave at certain intervals, such as every quarter, so making mistakes is a bit more impactful.
I like this idea! I did find quick saves good for the most part, but a save in the wrong area could end the run. But your idea combined with survival mode could really make it a challenge
I'd love to see some sort of Skyrim survival series, where you have weather mods as well as food/water needs, and you aren't allowed to enter any settlements or set up a permanent residence. You have to live off of hunting/looting
I'd love to see you do this, on legendary, at lvl 1 with all the cold weather and survival mods on with just very basic equiptment to start with but being allowed to loot enemies and stuff on the way for food, clothes, armor and weapons.

Im running mods that require my dragonborn to eat sleep and stay warm and not freeze, so this wouldnt work for me especially with going in the cold water. but its an interesting idea and video😊

If they could send guards to chase me that could be very interesting
