Hi Marion! Big fan :) Keen to try this! Small tip: when we use Saffron in any dish, particularly Biryani (which has Middle Eastern roots too) we usually bloom it with Milk and not water, that way you can put the entire thing into the rice. We also soak the rice in water for 10-15mins just to bloom the rice too!
I'm a middle Eastern too and we never do what you say lmao, maybe that's particular for your region

Hi Marion. I am, from Colorado in the US. Tonight I made a roast spatchcock chicken with green beans and mashed potatoes and scratch made gravy. It was incredible. This looks delicious too.
Nothing beats an oven baked chicken. Way better than the rotisserie from king Soopers.
YUMMMM! Homemade roast chicken is always the best!

Love that you are using whole spices. I'm in the midst of transitioning from ground species to whole, as you get better flavor. Rice pilaf is definitely an easy weekend meal. I usually broil my chicken separately, but I like the idea of just doing it all in the same pot.

Did this for dinner tonight with a couple of changes (didn't have some ingredients). Used hummus instead of yogurt, mint instead of dill, cranberries instead of pomegranate and onion instead of shallots.

I make pilaf with chopped carrots, bell peppers (green ones) & onions & jasmine rice. My father in law taught me to make rice when I was 19 & I have always made it the Thai way using my thumb to measure water!!!!
I cook professionally for a living and have for the last 40 years never going to culinary school self-taught and I make a pretty good living at it. Dishes like these are perfect for a working professional like myself as I am always running out of ideas on making dinner dishes during the week that don't take a lot of time and ones that you can also take to work for lunch the following day or two. Lately, my go to has been making express ramen using Indomie noodles and the ramen recipe straight from the Indomie website, with my spin on it of course! A fan since 2020 and largely due to your videos I have become an avid food geek. Never stop cooking!
I made an Asian style cucumber salad with springy cut cucumbers in a soy based sauce, with garlic, chili sauce, and other things 😊
I am Iranian and this recipe is mouthwatering. I am definitely going to try it tonight. Btw I would love to recommend you to try Fesenjān as I see you are also a fan of pomegranate molasses. it is one my go to Iranian dishes on a weekly basis. I prefer it sweet and sour a good mixture of both world. Some part of iran cook it sour and some part cook sweet and in tehran most people at least those who I know prefer it sweet and sour.

Hi Marion! This is so so so good. It is so packed with flavours. Such a simple, quick and easy recipe. It's very convenient when guests are over because it's quick and doesn't need to be minded. Could you do Middle-Eastern/Persian/Afghan recipes with Marion's twist (something like Marion x OTK)?
If your making stock on the weekend, make more and freeze. I make it in my Instant Pot, 4 hours. Then i freeze in 500mL pasta sauce jars. It's quite concentrated.

Hey Marion, watching from Rotterdam the Netherlands. Just wanted to say thay I always cook chicken thighs your way (with the corn starch and marionade, then wok in oil till its crispy, then cook the rest with added hot water). It is always amazing. Love your asian cooking style.

I blitz whatever veggies I have (the cheaper the better) so that they are about the same size as the rice grains, cook them until slightly caramelized then add rice. Finish with sumac and/or cumin and coriander powder. Perfect side to many dishes.

If you can get tamarind paste, that is a good substitute because it has a similar sour flavour. But you'll need to add 2 tsp sugar per 1/4 cup of tamarind to give it some sweetness, and also simmer it with a couple of tablespoons of water to give it a syrup consistency.
We indians add besides cinnamon, cardamom some large Cardamom, cloves, bay leaves to begin with. Some add star anise as well, but I don't like it as it masks all other flavours. This recipe is a bachelor's delight!

Two quick questions. 1) Do you have "Better than Bouillon" in Australia? (I'm in Canada) I find it much richer and more flavourful than stock cubes. 2) How do you keep herbs fresh in the fridge and for how long? I'm having trouble just standing them in water as they turn before I can use them all. If you have a tip, I'd love it. Throwing things out these days ($) makes me a bit crazy. Love the dish and it's added to my recipes. Thanks.
