On 2 level (single entrance both). Why not wall off the first level? I'm sure you have a good reason I just can't figure it out. Wouldn't defending the first entrance be almost identical to the 2nd level? Difference being they have 10-15 more walls to break through?
short answer: waste enemy time walking to make "castle under attack" timer go down to 0 so you can fix everything and reset raid progress back to 0%. long answer: Most of the time, in a fair fight, it requires at least 2 golems to breach a castle. Also, most of the time, they have a designated golem rider. After the rider finishes using 1 golem, he will need to walk back outside and ride the next golem then walk back to the door again. While golem rider is doing all that walking, the "castle under attack" timer will keep going down from 60 seconds to 0. If that hits 0, the defenders can now repair any damage they took, revive servants, etc.. A full repair basically resets everything. It heavily punishes the raiders that do not prepare the next golem to ride. The longer it takes for the next golem to get back into attacking, the better it is for the defenders. Other than that, it also makes areas where enemies can get stuck (traps) leading to a very easy fight. EDIT: It also enables this strategy: ruclips.net/video/udcHA2gGFvA/видео.html
servants do not roam on areas without tiles. so I only put tiles on the area closest to the front. that way, they can see enemy fast as soon as I open it. I have seen so many raids where it took so long for servants to help the defenders because they are on some corner chilling. this fixes that.
closeness to mortium. I spent majority of my time on a server farming stygian shards and doing pvp in mortium. Having a base close to it makes it easy to secure the loot.

What makes the #49 castle top 2? It feels super cramped and hard to push, I'd take the top 3 #56 anytime over it,

How do you increase the maximum number of castles beyond 5?
I edit the ServerGameSettings.json file and manually set it to 50
