    Let's see how to make 3 different types of java.
    Telangana traditional ambali
    Finger millets flour needs to be fermented first. The recipe could be made without fermenting also.
    To a bowl, add 2 teaspoons finger millets powder. Mix it in 1/2 glass water. Put a porous lid and dry it in the sun on the first day for a minimum of 2 hours. This has to be used in the next day. We can see that the millets flour sink to the bottom. Move this left over water into a different bowl. To this water, add 2 teaspoons finger millets powder, some more water and mix. This could be used for the next day. It need not be sun dried.
    Heat 2 glasses water in a bowl. Add the soaked finger millets powder and stir so that no lumps are formed. As the mixture starts to boil, stir continuously and cook on low flame for 10 - 15 minutes. Water could be added if needed. Simmer till required thickness is obtained. To make this java healthier, add oats to the boiling java. Add a pinch of salt and mix. Cut off the stove after 5 minutes. After the java cools down, curd or butter milk could be mixed with it. If the java becomes too thick, we could add butter milk to thin it down. Fermenting it will make the java sour and tastier.
    Instant ragi java
    To a bowl, add 2 teaspoons finger millets powder. Mix it in 1/2 glass water and stir without lumps. Boil 2 glasses water in a bowl. As water starts to boil, add prepared finger millets powder mixture and mix. As the mixture starts to boil, stir continuously and cook on low flame. Cook on low flame and stir continuously to avoid burning of the mixture. As the java thickens, add 1 glass milk and mix. Milk could be added later on after it is cooled also. Add a pinch of salt and mix.
    Jaggery ragi java
    Follow the same process as before. Heat 2 glasses water in a bowl, add finger millets flour mixture and boil. As the java thickens, add 1 glass milk and mix. Add 2 tablespoons jaggery instead of salt and mix. Cut off the stove. Serve hot or cold.
