    Method
    1. Prepare the Batter:
    • In a mixing bowl, combine the dry spices and pastes with the gram flour.
    • Mix in the diced onion, potato, spinach, and chopped coriander until well incorporated.
    • Sprinkle baking powder over the mixture and mix evenly.
    2. Add Hot Oil:
    • Drizzle hot oil over the baking powder and mix thoroughly to combine.
    3. Adjust Consistency:
    • Gradually add water to the mixture, stirring continuously, until you achieve a thick batter consistency.
    4. Heat the Oil:
    • Heat oil in a deep frying pan over high heat until it reaches frying temperature.
    • To test if the oil is hot enough, drop a small amount of batter into the oil; if it sizzles immediately, the oil is ready.
    5. Frying Process:
    • Carefully drop spoonfuls of the batter into the hot oil, ensuring not to overcrowd the pan.
    • Fry the pakoras until they turn golden brown and crispy, usually taking around 5 to 6 minutes.
    • While frying, periodically turn the pakoras to ensure even cooking and prevent burning.
    6. Serve and Enjoy:
    • Once golden and crispy, remove the pakoras from the oil and place them on paper towels to drain excess oil.
    • Serve hot with green chutney or your favourite sauce for dipping.

    Aunty, what does adding hot oil to the mixture before frying do to the pikoras?

      @@mohammedsheth1183 I must have missed it as my mother tounge is not the same as Aunty....so I can only understand so much.....can you translate why it is so?

      Adding the warm water and the the hot oil will activate the baking powder
      As you can see in the video it starts to bubble
      This will make the pakoras soft from the inside
