Shilin is a bit touristy these days, my favourite night market, if you have a guide, is actually Ningxia near the Nanking West Road roundabout. They have some really special stuff there.

There was one like that in my city, Tainan (around 320 kms south of Taipei), but it's been gone long time ago. You may want to try at this place as well as other diners/hawkers/restaurants next time you come to Taiwan again.
