How about NSU's 500cc Blown fueled also with a dust bin fairing that did 211.400 mph at Bonneville in 1956? Of course that record still stands, why? Best guess is those dust bin were long ago banned the dust bin fairings because how dangerous they were.
I think it would need a complete redesign, and its so lackluster of performance. For example, a GSX-R 1000cc stock engine, cut in half to be a 2 cylinder 500cc (so same size, but 1/4 the pistons) would make 99 to 100 HP. That by itself already is dominating that V8, and with nowhere near the cost, also probably better fuel economy. I have a wankel rotary engine in my car, so its not like I'm against odd engine designs (I still want to put a turbojet engine into mine if it ever destroys itself), and I have a weird fetish for insanely small engines that rev to the moon (I'll probably manufacture my own either rotary engines, or multi-cylinder extreme high revving engines if I get a 3d printer in the next few years so that I can make them from Titanium, after I make some jet engines of course). I'm a mechanical and aerospace engineer, and right now designing a very unique supercharger that doesn't require high rpm bearings (since the turbine will spin between 120k and 150k rpm, that was a challenge, also finding electric motors off the shelf that do that is a pain and I hate winding my own motors when I can avoid it), so I am for unconventional designs BUT that engine the most I would take from it is that "I want a V8 engine", and honestly I'd rather go with a V14 engine since the 7 cylinder firing order would be more novel concept to me.
Also if you want to recreate that one but better, Kawasaki sells the ZX25R, which is an inline 4 250cc, so you just need to fabricate a little and you've now got a V8 500cc just like that one, except the Kawasaki engine will be making 100 HP.
