In this video, I am going to show the recipe of Mutton Biryani which is made using milk mutton and rice. It is rich in taste and can be considered a royal dish. it has very few ingredients but its taste is phenomenal.
Ingredients:
Mutton 1.5kg
Soaked Rice 1kg
Curd 300gms
Salt 1.25tbs
Red Chilli Powder 1.5tbs
Oil 1cup
Ginger Paste 1tbs
Garlic Paste 1tbs
Milk 1/2ltrs
Water 1.5ltrs
Saffron Food Color
Rose Water 2tbs
Crushed Spices:
Green Cardamom 8pcs
Fennel Seeds 2tbs
Black Pepper Corns 2tbs
Cloves 8pcs
Black Cardamom 2pcs
Cinnamon Sticks 3small pieces
Nutmeg small piece
Mace small piece
Fine Powdered Spices:
Cumin 1tbs
Fennel Seeds 1tbs
Green Cardamom 5pcs
Mace small piece
Cinnamon 2small sticks
Black Cardamom 1pcs
For Boiling Rice:
Water 4ltrs
Salt 3tbs
Bay Leaves 3pcs
Kewra Water 1tbs

This version of Biryani evolved in Lucknow during the times of Nawabs. They were always keen about cleanliness and refined foods. This led to this Biryani. Yeh khaalis Lucknawi Biryani.❤️
Yes Milk is delicate thing to cook and that too with meat and delicateness is hallmark of Lucknowi cusine.
We also use milk in Bangladeshi Biryani, Korma or rezala. And we also use rose water, Kewra water, and meetha atar.

This is Lucknow's famous Idrees ki biryani, very close to it as far as recipe is concerned.
Exactly the origin is Luckhnow of this recipe i guess.

I want to eat this Biryani right now. I am going to cook it now. Its 6:00 pm now here in UK, lets see how long does it take t make it.
The time now is 8:30 pm and the Biryani is ready. I am now eating it. Its a bit different taste, needs a bit sourness, maybe adding Tomato paste will improve it. My wife loves it and she says this is the Professional Biryani. and she now wants a second plate. Thanks it was a good experience cooking Biryani without Onions and Tomatoes.

If you want to make it a little sour you could add Iranian barberry, it is also very decorative. I don't know if it is available in UK.
@@vizarathussainalam9137 Yes it is available in Irani Shops but quite expensive. Needs thorough washing as its full of sand. I use it when I make Irani Rice Chello Kebab.
This is exactly how this Biryani is made... This recipe's origin is Lucknow India and it's called Awadhi Biryani... Not atall heavy to the stomach...just loved it... Loads of love from an Indian brother 🥰🥰
