    This 2nd week of the 2024 PANTRY CHALLENGE and I'm getting into this challenge a bit more! I had a great time trying out some of your recipe suggestions! 😀 I think I'm going to have to find some more things to add to the pantry because ingredients are getting used up really fast! It was a great week to avoid going out shopping! The temperature dropped to -30C (-22F) here!! I was sooo happy to stay home and cook meals from the pantry and just keep the fire going 🔥🔥 How cold did it get where you are?? 🥶

      It was 50 F here in Savannah, Georgia…and I know I shouldn’t complain but it’s cold! I’ve been getting the -30 reports from home. Still have noodles and rice to use from my rv pantry.

      -40C (-40 F also) here in Edmonton Alberta Canada. Haven't left the house in days but I love staying home. Pantry challenge going well. Have used home canned chicken veg soup, a sheet pan meal with gnocchi, steaks with mashed potatoes and more this week. Kids forgot we were doing a pantry challenge!!

    Hey! We met very briefly at Patmos' live stream last Wednesday. Pat had suggested we check out your page if we were into cooking and preservation and stuff.. and that's right up my alley. So I came and watched a couple videos.. and the first item you pulled out to use (pasta, I think).. I saw the Western Family brand and immediately thought "she's in Canada!" and then as you went through your pantry/ freezer I thought "she shops at save on, buy low, superstore!" It was almost like looking in my own pantry/freezer, hahaha. So I went and checked your "about" section and not only do we live in the same country.. we're neighbors. I live in BC too.. ahhahaha! Excellent. I have subbed 😁

I go to watch Patmos because he is so calm and creative with his gaming, it’s so relaxing to listen to him while I play 👍🏼🧡 and he’s such a great guy too! I’m always surprised when he gives a shout out but we’ve been subscribers on each other’s channels since I started so it’s fun to watch each other grow! 🧡

    For your freezer, in case it helps, I put the same type of meat into reusable shopping bags in the freezer. So I can go through all the chicken or beef or pork at once. Stops me losing stuff

    When you big batch cook pancakes for multiple days, pour your batter into a jelly roll pan and bake it. You can cut it into whatever size you want. Takes out the individual pancake cooking time

    Cook noodles (yellow package) then add panko bread crumbs on your shrimp.
    Cook scalloped potatoes with a can of the tuna.
    Take your leftover beans and turn into refried beans, topping with cheese & sour cream.
    I'm with you on fear of new foods lol. Best of luck and cant wait to see what all you come up with!

    I'm watching this in July, in Central California. I'm doing a pantry/freezer challenge this month. It's been over 102F all week, today was 113F. I don't want to move, let alone go outside to get to a store. Using my crockpot as much as possible. 🥵

      Ughhh that heat is heading this way! It's been a struggle to cook this week and we have people making a lot of noise in the house and opening all the doors!! NOOOOO my cold air is escaping!!! Crockpot is a good rescue plan!

    Soaking beans overnight cuts cooking time and releases gas. Great meal ideas!! I loved the tenderloin dinner.

    For the red lentils I've seen someone soak them over night then blend them and add them to muffins for extra protein. You can also make a coconut lentil curry with them using the packets of powdered coconut cream. Now is a good time to buy canned coconut milk if you need to stock up a bit on that cause it usually goes on sale around now for the Chinese New Year.

    I have seen pancake muffins if you want to use the pancake mix differently. You could add any fruit or chocolate chips. The stuffing make a good breading to coat chicken or in with meat to make meatballs or meatloaf and maybe even with your salmon patties. I think that you are doing great using up what you set aside already. I think rice flour is a good coating for chicken if you fry it for a stir fry but I wonder why you bought it. I had an everyplate recipe where you mix panko bread crumbs with oil, Parmesan cheese and Italian seasonings and coat the top of the chicken in sour cream and top with breadcrumb mixture and bake. It was yummy! Good luck with your new ingredients you added.

      I wish I could remember what I bought the rice flours for but hanging on to it hoping my spotty memory will find the information is a lost cause I think LOL Ohh I think I had a HelloFresh recipe that did chicken in mayo with panko too! Great tip Alison :D

    When I make salmon or tuna patties, I use bread crumbs, and egg and bread crumbs and some Old Bay Seasoning and fry them up after forming some patties. Then I serve with a veggie and rice or noodles. I make some kind of fish patty/fish cake at least once a month.

    Great video. Just at the top of my head….sprout the lentils and eat the greens. Beef vegetable soup..use up can/frozen veggies, use beef stock, add lentils or pasta to it. Panko bread crumbs…chicken Parmesan. Use up those crumbs and pasta. Potato boxes….put into a crock pot, add a condensed soup, veggies, and whatever meat. I just made a cherry tart yesterday. Crust..3 oz. Cream cheese, 1/4 pound butter, 1 cup flour. Reserve 1/4. Press into bottom of pan, add cherries on top, crumble reserved dough on top then sprinkle with sugar. 350 till slightly brown. It was yummy! Good luck!

    You are doing a fantastic job of using your supplies, and I personally love how you are combining your pantry with your freezer! I mean, the point is to use what you have, and stay home and be cozy! I’m here for it! Also, Jessica, do you have a post office box?

    Hi Jessica. My daughter Samantha and I love watching your channel. We love your creativity with the pantry and freezer challenges! Something you might try with the red split lentils is Cinnamon and Brown Sugar Breakfast Lentils! Also a suggestion for the yellow split peas...Crunchy Split Peas (Use as a snack or a crunchy topping)! Can't wait to see what you come up with on your next video!

    The eggplant, mushrooms, a can of salmon and artichokes would be great in either a pasta salad or on a pizza.

    My mom used to make a creamed salmon with peas and serve it over rice. It was kind of a bechamel with flaked canned salmon and peas. I think she used to use frozen but I'm sure canned would work in a pinch.

      Yes! My mom made a bechamel sauce with hardboiled eggs for topping salmon steaks and salmon loaves too! The canned peas weren't quite as mushy as I remember them lol I bought them for soup mostly ;)

    Great video as always, Jessica! You really used up quite a bit and learned some new recipes. I think a yogurt dill sauce would have been amazing with those salmon patties.
    I noticed you had a can of artichokes in your "use it up" pantry. Have you tried them on pizza? Perhaps you could get creative and make pizzas with the BBQ sauce as a base and maybe some other ingredients you need to use up from the freezer. Also, I'm wondering if some of the Shan seasonings would pair well with your red lentils. Just some thoughts, anyway.

      We use artichokes hearts chopped in Spaghetti sauce, its so yummy. Haven't tried them on pizza but I will now. Plus artichokes are a super food.

    Red lentils are a fantastic thickener for soups, chili, and stews since they cook down to nothing. You can add them to oatmeal as well.

    My mom made a white sauce with the peas in it instead of the patties to go over the patties..everyone( but me) loved it. I'm allergic to fish!

      I remember my mom made a kind of creamed peas and would put it over salmon steaks too. I didn't even like fresh salmon too much but the sauce would make it a bit nicer.

    You could've added a little water to your applesauce jar and thinned your batter out some, that may have helped with the density. I would like to try that fig spread and add bacon to the toast....yum❤

      I also use the rubber spatula to scrape all the leaving into that same water. Better in the pot than down the sewer

    for a special Breakfast or brunch: Basic Crepes From the Kitchen of: Lorita Sutton
    Ingredients: 3 Tbsp. butter
    3 eggs, slightly beaten
    1/2 cup milk
    1/2 cup water
    3/4 cup all-purpose flour
    1/8 tsp. salt
    Butter
    Cottage Cheese Filling
    Strawberry sauce
    Recipe instructions: Melt butter in 8 inch crepe or skillet. Pour butter into mixing bowl, set pan aside. To mixing bowl add eggs, milk and water; beat with rotary beater. Blend in flour and salt till smooth. Refrigerate batter for 2 hours or overnight. Note: Allow 2 to 3 crepes per serving. To Freeze: Leave crepes between sheets of waxed paper. Wrap in foil. To reheat in oven: Remove wax paper, wrap in foil and heat in preheated 325 degree oven for about 15 minutes.
    Recipe instructions: Place buttered crepe pan over medium-high heat until hot enough to sizzle a drop of water. For each crepe pour 3 Tbsp. or a scant 1/4 cup batter into pan/skillet, rotating pan as batter is poured. Crepes should be thin lacy pancake almost immediately. If too much batter is poured into pan, pour off excess immediately. If there are holes, add a drop or two of batter for a patch. Cook until lightly browned on bottom; turn and brown other side. It may be necessary to add more butter to grease pan before pouring in batter each crepe. Stack crepes between sheets of paper towels or waxed paper until ready to use. Spread 3 Tbsp. Cottage Cheese Filling down the center of each crepe; fold the two sides over the center. Serve with Strawberry sauce
    Recipe for: Cottage Cheese Filling & Strawberry sauce
    Cottage Cheese Filling Ingredients: 3 cups small curd cottage cheese, 3 Tbsp. sugar
    1 tsp. grated lemon peel
    1/2 tsp. vanilla
    Recipe instructions: Blend together cottage cheese, sugar, lemon peel and vanilla in blender or stick blender. Use to fill crepes makes 3 cups.
    Strawberry Sauce or Berry Sauce
    Ingredients: 1/2 cup sugar
    3 cups fresh strawberries or any berries you prefer or have on hand
    1/4 cup water, dash salt
    1 Tbsp. corn starch, 1 tsp. butter
    Recipe instructions: Wash & hull strawberries; crush 1 cup. Slice remainder and set aside. Combine crushed berries, sugar, water, salt, corn starch. Cook over medium heat, stirring constantly, until mixture thickens & boils. Boil & stir 1 minute. Add butter, fold in sliced berries.
    My Notes: I try to remember to make the crepe batter the night before unless eating a late breakfast or brunch.
    I usually use frozen berries and thaw them unless there is a good sale on berries

    You can make a yummy mochi cake with glutinous rice flour and coconut milk - you can make it any flavor by combing other ingredients you have in your pantry

    Love this, trying to go through my pantry right now too! My dad makes his own mochi with glutinous rice flour and he said it’s pretty easy to make. You could get fancy and wrap it around ice cream for ice cream mochi, but I think he prefers to just dip it in a little soy sauce (his mom did too and she was born and raised in Japan, but I prefer ice cream mochi lol).

      I’m going to have to try this mochi! When I looked for it yesterday the first thing J saw was an ice cream mochi recipe coincidentally! I don’t have any ice cream at the moment otherwise I might make it and call it breakfast 😂

    I make salmon patties using my home canned salmon. All I do is take a pint jar of my salmon. Take off the skin. Add 2 slices of bread torn tiny pieces. I use gluten free bread as I can't do gluten. Then I add 3 eggs and mix by hand. Then shape into 4 patties. Then sprinkle with salt and pepper. I like tasting the salmon, not a bunch of other flavors in my patties. Then I fry them in oil till browned on both sides. Super easy dinner. I like to eat mine dipped in my homemade ranch dressing or my homemade ketchup. Sometimes cocktail sauce. Just add horse radish to ketchup. Presto! Cocktail sauce.

      I make the Red Hot Sauce from one of the ball books and it makes a great cocktail sauce! I’ll have to give that a try sometime!

    For the rice flour, look up recipes for butter mochi that is a Hawaiian dessert. So yummy and a yummy, chewy texture. I think you’d love it! You can make it plain and Carmelized or even do a fresher fruity ones using the jello mix actually! Cheers and happy new year friend!

    On your salmon patties I would make a spicy mayo / sour cream dip or like a thousand island type dressing or dip!

    Casserole with that scalloped potatoes box, add a can mushrooms, & canned chicken/ tuna. You can add even more veggies if wanted too. Use the stuffing mix for meatloaf as the binder.

    The only meals I can think of are split pea soup, lentil loaf (vegan meatloaf), and a ham and potato casserole with the boxed potatoes

    Red lentils: make tortillas for wraps, buns, Dahl, Ethiopian lentils (you would love those-spicy). Look up video from Broccoli Mum for lentil wraps and buns. Wraps are only lentils and water

    To use up the red lentils, just add a little to every soup, stew and everything you use beans in like even chili, & rice, it will add more nutrition, and texture...... also you can cook them up with a little broth and then drain them add seasonings like you would to a burger, onion, garlic egg, ect... and fry them up in panko bread crumbs , red lentil patties are so good!

    You could use the canned salmon to make a tuna salad for sandwiches and replace the tuna with salmon.

    Love the challenge and it is giving you something to do in the cold weather 😊. You still have plenty of stores to use.
    Just spread the cream cheese on the toast and then top with the fig jam, yummy ✔️

    Rice flour tortillas. 3/4 cup water, 1/3 salt & 1 cup rice flour. Oil for hands when making them.

    Minus 35 here in Calgary..you can find the fig spread at Save on Foods. I liked the mix of fig and cream cheese🙂

    I love rotel dip!! That's a great dip for movie night! 1 can of Rotel ,cheese,and ground beef mixed together cooked on the stove. I eat mines with tortilla chips. Soo good. 😊😊

    I like to mix my Zuchini relish and mayonnaise and a dab of sour cream and top the salmon patties. I too don’t love canned salmon but I do like salmon Pattie’s from salmon. We fish for our salmon out of the Columbia River. Also, your chili is actually 3 sister soup… look it up! It is an old Anasazi Indian trio.. corn beans and squash stew. The Anasazi Indians farmed them together in the southwest in Southern Colorado, New Mexico area.

    You can make a cranberry upside down cake and a chicken dish with one can ( make your own), 2 cups of cranberry sauce and 1 packet of Lipton onion soup mix and Russian salad dressing( 8oz). Brown chicken pieces( like thighs), pour above sauce ingredients over chicken in an oven baking dish, cover and bake in 350 degree oven for 1 1/2 hours or until done. Can use cranberries to go over pork tenderloin too. What ever is leftover from cranberry sauce use as jam.

    Sorry I missed the Live, I was cooking/filming dinner when you went live but I watched the replay! Some good recipes last week. For the Glutinous Rice flour you could make some Mochi Doughnuts or Mochi cookies for something different other than pancakes for breakfast.

    To get sauces thicker in crockpot, recipes, you can leave the lid off for the last one or two hours of the cook time and it will help evaporate the liquid and thicken the sauce

    With the scalloped potatoes you could make a shepherd's pie type deal. Use the BBQ sauce in the meat for a BBQ shepherd's pie.

    momma salmon patty recipe: for every can of drained salmon she added 1egg, chopped green onion, and crackers, seasoned it with a bit of lemon pepper and dry dill..let sit for a bit then pat out and fry...yummy
    served it with a side of of peas and some applesauce..and for on top of the patties if you wanted it she Had tartar sauce.

    Rice flour you can probably just use in place of cornstarch if you want-that’s not super interesting though. 😂
    You might be able to use it in idli or dosa? I usually use idli rava, but I’m pretty sure that’s just a coarser version of rice flour. I also use it in pakora (fried & battered onion snack!! Extremely tasty.) but I don’t know if you have besan (chickpea/garbanzo bean) flour…

    I saw a video last week where someone made a lentil loaf with stuffing mix and lentils. They used the brown lentils but I’m sure it would work with red although they do get mushier so you would want them to be pretty dry. Sometimes I use up red lentils by cooking them with rice. Cranberry jalapeño dip poured over cream cheese is amazing. But you would need green onions and cilantro. You are supposed to make with fresh cranberries, but there was none to be found so I tried with frozen and it was very good. It is sweet, spicy and tart. Everything looked delicious!. If you get tired of eating the chili as it is you could add a bunch of beef broth and turn it into a soup and top with corn chips and sour cream. Also a vanilla fig jam is available at this time of year at Costco. My husband loves it. It is a big jar for $9.99 I think. Good deal for the size.

      I'm so glad that you enjoy the videos! I haven't ever shown Mr. Wanders (except the odd hand or foot!) I have a habit of trying to stock canned meats that have a long shelf life and when I have a BUNCH of tuna I automatically look around for other things and end up with canned salmon. I was just saying to Mr. Wanders that I think I'll stop buying it!! It really isn't something that I like. The kale, on the other hand, grows so well in our garden that I just keep trying to find recipes that I enjoy it in. I did make some powder out of a bunch of it that was easy and inconspicuous in many recipes!

    I like my salmon patties just plain, potato pancake and some kind of green veggie. I like fresh salmon with soy sauce a little bit of brown sugar Rosemary and ginger and my sides are broccoli and sweet potato.

    Try you dip with ginger snaps. If you had rinsed out your applesauce jar with some water and added it to the pancake mix would have thinned it out where the batter was not so thick. This way would have cooked up lighter and more fluffy. Plus, if you melt your butter and pour over your pancakes then pour your syrup will be taster. My mother made her salmon croquettes out of cream potatoes ( not instant potatoes…only real potatoes that has sat over night). She added in chopped green onions, egg, salt & pepper. The potatoes need to be very stiff…hardly any milk & butter. We would have these with a tomato, cucumber & onion salad, fried okra or fried eggplant, sautéed yellow squash. We always ate ours with Tabasco sauce and I love ketchup on mine.

    You inspired me. I just got done doing a pantry check and have an insane amount of canned creamed corn. I have no idea what I'm going to do with it all. But I started with this creamed corn, ham casserole thing. It's in the oven now. I'm crossing my fingers that turns out. I think some kind of chicken corn soup is probably next. I have no idea how I ended up with more than 12 cans of creamed corn but by golly!

    My favourite way to use panko crumbs is to chop chicken tenders or thigh fillets into bit size pieces. (You can use breasts but I find them too dry.) Mix a season all type spice blend with some curry powder. (I usually mix 4 Tbsp of the season all with 2 tsp of curry and then just spoon out what I need each time.) Add spice blend to beaten egg. Dip the chicken in the egg mixture, coat in panko crumbs and place on a lined tray. Cook in 190 C oven for 20 - 25 minutes. turning once.

    for salmon cakes I tend to top with chutney or salsa/guac. flavoured ketchup - like a curried ketchup - could be yummy. My partner likes sriracha mayo.

    I don’t know if you’re familiar with tamarind but it’s a sour fruit so that’s probably a spicy sour sauce which would be delicious on any meat.
    For the cherry filling, my cousin makes this cherry delight it’s just a Graham cracker crust, cream cheese/whipped cream mix topped with pie filling. Super basic but delicious and it’s always where my brain goes with pie filling any more.

    Caned salmon recipe: follow the instruction to prepare 1 box of au gratin potatoes in an 8 by 8 baking dish. Drain 1 can of peas and one can of salmon and add to the prepared potatoes. Follow the baking instructions on the box of potatoes.
    Voila! My Great Aunt Alice’s Salmon Au Gratin potatoes. SO DELICIOUS.

    I was gifted eggplant starts last year and after growing them I decided I don’t really like them ☹️ They are not terrible as a substitute for potatoes in Mark Bittman’s “Lentils and Potatoes with Curry” recipe.

    That chili looked delicious 😋 was the hubbard squash noticeable at all? I have a problem swallowing sweet potatoes, Acorn squash, and pumpkin (and their relatives from the squash family) on their own, they're a bit intense for my taste buds and I've ended up wasting them, so I'm always looking for ways to include them in foods without their strong flavor being so noticeable for me...
