Truee i finally learned thanks to this vid how to make look huge.. in other videos they just scoup 1 spoon of dough and it rises somehow on the pan., In this video however they dough looked exactly like mine and she just combined the scoups to make it look perfectly 🤩 Thanls 👌
I made it and it tasted so good! The only thing I couldn't do was caramelize the sugar up top the "Brulee"; however, the custard whipped cream works so well with the pancakes!
So I made this today, It worked ok, the first few times it cooks too quickly on low heat at the bottom, too fiddly in terms of flipping it over etc. Then I tried folding one large circle version like a calzone and It came out perfect.
▶Ingredients 1 Egg yolk 15g Sugar 6g Corn starch 100g Hot milk 2g Vanilla bean paste 2 Egg yolks 2g Vanilla extract 20g Milk 35g Cake flour 2g Baking powder 2 Egg whites 45g Sugar 100g Whipped cream_whipped up 50% (+10g sugar) ▶Method 1. Mix egg yolks with sugar, add cornstarch and mix, then pour in hot milk little by little and mix. 2. Add vanilla bean paste, mix and boil over low heat while stirring until thickened. Transfer to another bowl and cool. 3. Add vanilla extract to egg yolk and mix, add milk and mix, then sift in cake flour and baking powder and mix. 4. While whipping the egg whites, when large bubbles appear, add the sugar in two parts and whip to make a meringue with firm peaks. 5. Add a little meringue to the egg yolk mixture and mix, then add the remaining meringue in two portions and mix quickly and lightly to avoid foaming. 6. Squeeze the dough into a pan heated over low heat, cover, and cook for about 5 minutes. Layer the two doughs, sprinkle some water on the sides, cover, and cook for another 3 minutes. 7. Turn the cake over, cover with a lid, and cook for about 3 more minutes, then remove from the pan and cool. 8. Put the cooled custard cream through a sieve into the whipped cream whipped to about 50% with sugar and mix to make cream. 9. Layer two cooled pancakes on top of each other and lightly cover with mousse. Squeeze cream on top and place mousse on top so that the cream flows naturally.
