A little bit correction about Vietnamese banh mi as a Vietnamese myself: Mayonnaise cannot go alone, in Vietnam we put 3 types of sauce: Chili, Ketchup and Mayonnaise. Also, after u've done ur fillings you should heat the whole banh mi up.Either put them in the oven or lightly pan sear it then served.Also less vegetables but otherwise u've done a pretty good job.
And the bread is similar to baguette not hot dog bread, and we don't put onion in banh mi , i am Vietnamese but i don't know what are they making until the bread came out 😅
You should try making "Axone". It's a traditional dish from Nagaland state in India. It's typically made with smoked pork and fermented soyabeans. It has a strong pungent smell but the taste is delicious. You should give it a try :)
