The angle on grooming shears can vary depending on the style and manufacturer. On bevel edged grooming shears, we see a lot of 35 degrees. If it is a convex grooming shear, they tend to be around 45 degrees. Those are just averages and what we see a lot of based off our experience.

can someone explain to me the difference between the ookami gold system and the twice as sharp system?

Twice as Sharp is a general scissor sharpener. Ookami Gold is dedicated to sharpening convex (Japanese) scissors. The latter sharpens on a fine diamond wheel and is polished (honed) with a very fine abrasive paste, giving a very fine finish. The process takes a lot longer giving that the sharpening burr is removed by working on a fine abrasive paper and after honing the inside of the scissor is polished with the honing paper, the blade is then honed again with the paste and the scissors assembled and the burr is then cut off. After this process scissors will cut cling film, saran wrap. Thats how I test my work. I live in the home of the McLaughlins and I think you must be the very first Jeremy McLaughlin I've ever encountered.
