Nice recepie, for roasting flavour you recommend to cook vegetables and paneer at very high heat, what I did and I suppose restaurant or dhaba people also doing is - after mixing gravy and vegetables one more tadka requires - it's like this - heat oil fully and add prepared sabzi it willl get fire that will give an amazing burnt taste.
