VEG BIRYANI! How to make Vegetable biryani | Vegetarian Biryani | Food with Chetna

  • This is a great crowd pleaser recipe, whether it is the weekend or a special occasion, which is why I have chosen it for my Diwali main meal. It is a easy and simple recipe and tastes amazing!
    Ingredients
    6-8 tbsp sunflower oil
    5 medium sized onions, thinly sliced
    For the vegetables
    2 bay leaves
    1 stick cinnamon
    2 star anise
    5 cloves
    5 cardamom pods
    1 tsp cumin seeds
    2 medium sized onions, finely chopped
    2 cloves garlic, grated
    1 cm ginger, grated
    2 tomatoes, finely chopped
    1 tsp salt
    1 tsp chilli powder
    1 tsp turmeric powder
    1 tsp garam masala
    1 tsp ground cumin
    1 tsp chaat masala
    1/2 tsp sugar
    1 small cauliflower, roughly 400 gms, cut into florets
    200 gms fine beans, cut into half
    1 carrot, roughly chopped
    2 potatoes, cut into 1 inch pieces
    100 ml water
    For the rice
    Pan full of boiling water
    1 bay leaf
    1 stick cinnamon
    4 cardamom pods
    8 black peppercorns
    400 gms basmati rice
    To layer
    2 tbsp milk
    pinch of saffron
    1 tsp rose water
    handful of fresh coriander leaves, finely chopped
    handful of fresh mint leaves, finely chopped

    I cooked this tonight and it was absolutely delicious. Fed all six of us with enough left over for 2 lunches tomorrow. I didn’t have rose water or saffron, but I’ll get some for next time, although I it was good enough without.

    I made this for my family Christmas dinner and it turned out perfectly. It was a bit of work, and required some good timing to make sure the rice and vegetables were pre-cooked just the right amount, but the end result was spectacular. I will certainly make it again.

      I just realized it’s not 100% vegan b/c of the milk w/ the saffron, but I’ll use almond or cashew milk.

    This is the first video I've seen of you after seeing and loving your style, elegance and wonderful personality on Bake Off. This really looks amazing.     This tasted amazing but the potatoes just wouldn't cook through, I had them quite small and cooked for an hour. During the stove top phase should the lid used be one without a hole in it. Love your channel, such simple and tasty recipes.

      There are so many varieties of potatoes and some of them I have never cooked with either. In case next time try and chop them smaller so that they cook through

    That is so mouth-watering! Question: how do you known when the rice is 60% cooked? How many minutes should the rice be on boil to get that 60% cooked? Wish you and family all the very best during Diwali!

      You can basically tell on how it looks, if it still has a bite but the outside is getting soft , that should be good

      Yes you can try with some other veg too. You can cook it on the hob if you want, check out my chicken biryani video where I cook it on the hob.

      OOOh not sure, if you are talking about the thin foil containers then that is not thick enough and will burn the rice, you can cook on the hob though, check out my chicken biryani and I have cooked that on the hob

    I have a problem. This is far too much for one person. I can make it and freeze it in smaller portions but rice should not be frozen. Any suggestions?

    I'm in my mid twenties, didn't have any one to teach me, living alone, and ready made meals are disgusting & expensive - I still can't cook - is there any hope in me still being able to learn to successfully cook?!

      Z V start with eggs they are the easiest... even some easy pasta recipes, salads... if you are Indian, start with rice, dal and some basic potato fry. Start cooking, it’s not too tough or boring... you will soon realise it’s one of the best stress buster even .

      @joeyjamon I've always used Cortas brand and have had consistent product. Probably better luck in a Waitrose. If you also see Orange Blossom water, then pick up both.

      In India we have open houses with lots of ventilation so our house don't smell. For generally nice smell(not related to cooking), we often use incense and air fresheners at home

    Why You add rose water in Bulgaria we rarely use it for cooking and saffron lol What smell!

    About how long it takes to cook the rice 60 to 70% only?!

      I actually can't tell you an exact time as it depends on the variety of rice you are using. Also it is easy to check, maybe after 10 mins or so, if the rice still has a bite means it is 60-70% done.
