@@AK-jt7kh the pepper/onion relish I recommend is Dickinson's. It's discontinued as far as I can tell. I bought a bunch of jars a while back when I heard/read rumors about the company being sold off to Smuckers. On my last 3 jars... 😕 Not having any good luck in finding a decent replacement.

Tamales 🫔 for anyone born and raised or has lived anywhere in the Southwest or West coast know tamales aren't simply snacks, thwy can be meals unto themselves as well as paired with any number of foods like beams, meat, elote ( boiled or grilled corn that is slathered with mayonnaise so that the parmesan, or Oaxaca cheese, chili powder can adhere to the corn on the cob and either a sqeeze of lemon or lime juice either fresh or from a bottle. You need to try south Louisiana cracklins (fresh fried, NOT bagged pork skins) and fresh boudin balls. The best I ever had was at convenience stores in Krotz Springs and Opelousas.
Where I work we have a decent one. But it's only for commercial kitchens. Otherwise, most definitely I refuse to eat a salad or an onion ring when i go out to eat. Can't trust these bottled comebacks

My grandmother made homemade divinity every year for Christmas and for my birthday 🎁 it was the best. Better than any store bought divinity
Making divinity is almost like nuclear chemistry...wrong temperature/humidity/ingredient and it all goes wrong (think white diarrhea)
