- Healthy Meal Prep with me! A week of meal prep in just over 2 hours. This took some planning and shopping but I share it all with you and features a slow cooker meal, veggie chilli, madras curry, breakfast granola, snacks and lunches too. I hope you really like it x

Veggie Chilli:
Butternut Squash Soup: Heat the butter in a pan, add the butternut squash, onion, garlic and stock cube, and stir well. Cook gently for four or five minutes. Add the ginger and chilli flakes and cook for five more minutes. Pour in the water and bring to a rapid boil, then turn down the heat
slightly and simmer for about fifteen minutes, or until the squash is soft.
Once the squash is soft, blend until the mixture has a fine, creamy
consistency. Return to the heat and add the coconut milk. Let simmer for five minutes. Season to taste (serve this with fresh coriander and a squeeze of lime juice).

I love the meal prep ideas because not only do you have healthy options at your fingertips, but it also lightens your "mental load", which is perfect for these times when you are homeschooling in lockdown and feeling a bit overwhelmed.

This isn’t criticism but something you might find interesting.
I have an eating disorder and there are a few key things we can do when discussing food to help those listening with eating disorders or even prevent our kids from developing disordered eating:
- not referring to ‘good’ and ‘bad’ foods or saying we have been ‘good’ or ‘bad’
- avoid discussing weight as a predictor of health and focus on fitness and feel good goals
- avoid using new goals as a way to fix previous over indulgence - the new goal is for the future don’t use it to make up for eating!

Your meal prep looks so delicious and fresh. It’s so appealing to see so many beautiful colors in our food. Our family has been working really hard to not only eat healthier, but we are focusing on the frugal aspect, which often forces us to eat more at home. Thank you for the lovely inspiration.

Very lucky to have a family who eats whatever you cook for them.
I live alone but need to lose weight. Feel so low so this is really helpful. I've started with spinach smoothies but struggle what to have for dinner. So thank u ur such an inspiration xx

Hi, agree with GeekChick6 smoothies are great:) I found finding one or two youtubers and sticking to their healthy meals helps, otherwise there are too many options. I try to write a weekly meal plan and don't stress is i am missing an ingredient. Good luck and know you are not alone:)

Have you had any snow this winter? In Bristol, we had one snow day (I think last week but I can't remember) and was wondering if you had one too, and (if you did) wether you went out and enjoyed it too as snow is so magical, especially when you're a kid!

I love that your boys enjoy raw veggies. I gave my girls vegetables from an early age & never had a problem getting them to eat healthy. They still love them & my youngest begs me to make her fave broccoli frequently. (she can make it, but loves moms touch 😉)

Really loved this video!! Just one quick thing though, coconut milk light just means there's more water and less milk! So don't buy water 😂 just use less if you want, but it's really good for you so I wouldn't feel bad about it! ❤️❤️❤️

i just bought a butternut yesterday and i will be making the soup- yummy
Use a splash of white vinegar in the bowl that you wash the fruit in then rinse well it keeps them fresher longer x

Hi Emily just a quick tip maybe you should try and put salt in the strawberries because that really does activate the pesticides but you do need to give them a good wash down afterwards✨✨✨

To get rid of pesticides it’s good to wash fruits and veg with bicarbonate of soda. Just need to at some in a water and soak for 5 min.
I make that soup but I put 3 red onions In it as well. Sure I got the recipe from Mumsnet it’s meant to be great for your immune system. It’s a family favourite here x
