- Hi everyone! Thank you for the wonderful response to our last video reacting to Uncle Roger reacting to the BBC fried rice video! Today you friendly neighborhood Taiwanese and Japanese react to Uncle Roger and Jamie Oliver making his version of egg fried rice.

We were not sure if anything could top the last video in terms of cooking that is completely alien to us, but I must say we were very surprised nonetheless. Than you for suggesting that we also watch and react to this video!

US Navy story. Ship’s cook from south Louisiana put leftover rice on the breakfast line. Those of us from south Louisiana and those of Asian/Pacific ancestry demanded the rice and the fried eggs placed on the rice. We all sat together and passed around Tabasco hot sauce to sprinkle in the eggs and rice. We looked at each other asking “you too?” as we realized a shared cultural food tradition. Other sailors looked at us like we were crazy but we didn’t care. For us it was a taste of home.
We love hearing stories like that! Tabasco is something we use a lot here as well - hot sauce, eggs and rice is a great combo.

I'm from New Orleans and my parents are immigrants from central america. So I am double white rice inclined. I can tell you that I eat eggs and rice with hot sauce for breakfast most mornings.

The usual uses we see for chili jam are just a little bit at a time, not the large spoonfuls in the rice. Definitely agree with you that some freshly chopped or dried chili flakes are the way to go.

Until recently the only ramen I ever ate was instant cup noodles. I was in heaven when a Japanese restaurant served traditional ramen.

Cajuns and creoles of south Louisiana make rice like people in Asia. Look up dishes called gumbo, jambalaya, ettouffee, and boudin.
Those all sound delicious! Cajun and Creole cuisines are full of wonderful flavor! We will have to find a restaurant that serves them here!

I think Brits are using rice drain technique from Indian rice dishes without knowing why we do it.
If you want your rice for a dry meal, you drain the rice because rice contains lot of starch that spoils flavour.
But if your dish is porridge type, you cook in the same water you cooked the rice because you want to retain that starch.
We’re not all that bad over here. I’m English and I have a rice cooker. I also have a wok that I bought 30 years ago that I have never washed . That wok is as old as Uncle Roger!

Rice is strained only if you are making Biriyani (A dish from India Bangladesh and Pak in case anyone doesn't know) We cook the rice till it's 80% done then the rest of it is cooked using the vapour along with the meat NOT FOR EGG FRIED RICE

Thanks that I was watching alot of Anime in Japanese with subtitles I know what Baka means. And yeah. Jamie Oliver is really a Baka when it comes to egg fried rice here. Chili jam? Even I would rather think of Sambal. I never heard of chili jam before.

We tried this recipe in another video, the chili jam doesn't fit with the rice at all...it is too sweet...

Jamie's restaurants are all closed now. because he kept on pushing healthy eating which not much enjoyed.
You practically just need to use oil or lard or margarine(other than olive), eggs, rice and salt (or any salty sauce) if it's really hard to get other asian ingredients. Just to get a grip of what to expect and then you improvise.
No, never margarine. Just plain vegetable oil/palm oil. Sesame is good too.
The rice draining thing, I think comes from the fact that we do not cook rice that often an so few know how to do it properly and even fewer have a rice cooker. also a lot of people are lazy cooks and will often put stuff on the heat and then go watch TV and then come back to it after a certain time, and as you know with rice it needs the right heat and the right amount of water and to hot or not enough water and it dry and burn, and so with all that combined the rice packets will often advise a quantity of water that is way more than you would normally use to build in a sort of safety net for those that have no clue how to cook rice and this always means having to drain the rice, and well the people that know how to cook rice simply ignore the pack cooking instructions however in the UK family's usually learn bad cooking habits from their parents and they learned them from theirs and so on and so people for generations have been following the packet instructions simply because they did not know better
You will be pleased to know that this Englishman never uses Olive Oil when cooking anything Asian. 😊
I think the "English way" for using too much water when cooking and draining the rice come from the days when we could only mostly get long grain white rice.
Another european here, not british though. Yeah i guess we just don't really know how to make rice yet, we made it the same way. I guess it is safer to make the instructions in a way so the rice may be a to wet instead of having it burn, idk.
Risotto and Paella is pretty darn tasty though! :D
People really treat rice like it's pasta..... You don't drain rice... If you cooked it properly... It ain't that HARD
Maybe at some point instead of only reacting to it you could make the dish and try it since just watching is half of the story, you might even be pleasantly surprised who knows.
These are usually healthy budget recipes using methods available to the everyday Brit. Woks and rice cookers are unheard of or are rarely used since rice is not a part of our everyday diet so is precooked and dried out to last a long period of time.

Fun Fact....Uncle Roger accent is malaysian chinese.He from Malaysia but he live in uk(maybe).Our Country got multiple accent and race.The other basic Malaysian accent is malaysian india is diffrent too.So If you asking what is Fuyoo and hayaa.......Fuyoo means you "impressive" and hayaa means "disappointed" ..These word mostly to show you feeling of something.I know these because im malaysian
In many European countries British cuisine is used as the foremost example of bad food tradition. Even Germans tend to look down on it, and they usually know they sit in a glasshouse when it comes to questionable national cusine. So maybe bad egg fried rice really is just the best way for Jamie Oliver to go.

Even if the flavour of olive oil would work, which it doesn't, the heat required for fried rice is way too high for olive oil; you actually just ruin the olive oil, so even if this were some kind of strange Western dish inspired by egg fried rice, then it would still be bad.

I love olive oil, but for the sake of all that is sacred, I cannot fathom putting it in asian food. Like, why would you put olive oil in fried rice? Who in their right mind would do that shit?!

There is actually a reason behind cooking water with an excess of water and drain it. Rice picks up a potentially risky amount of arsenic, which is naturally occurring in the soil. If you cook the rice with excess water and drain it, you cut the amount of arsenic in the rice in half. But since rice is such a staple in Asian cuisine, and draining removes a lot of the starch, the Asian media tend to ignore that topic, even tho China and India produce the most rice by far. That being said tho: western media deal a bit in double standards, as much of the industrial food contains ingredients that are known to be a health risk just the same. So the way of cooking rice is a cultural thing in the end and there is no right or wrong.

jamie didnt put soy sauce or msg because its too unhealthy for him same with why he used olive oil since its healthier than sesame or peanut oil he's actually pretty disliked because he comes in and changes school lunches to fit his idea of healthy as well as championed and got a sugar tax passed in the uk also apparently his restaraunts are mediocre and overpriced and thats why a lot of them are shutting down

Not really though. I am white and I know you don't fry spring onions up like that. I also know you are supposed to drain tofu and not shred it into food like it is mozarella cheese. And so forth. You need to treat ingredients correctly if you want it to taste good. Jamie messed up the dish and tried to fix the dryness or texture by adding water mid-way. Who adds water to stirfry?

I eat fried rice in the morning. And it really gave me energy until midday. I add garlic in every dish. Kailan dish, crispy fried fish or chicken. It is a must. For fried rice, smashed and chopped the garlic, still fry until slightly brown, the aroma smell so heavenly good. Use chicken fat or pork oil to make fried rice, then followed by shallot, egg, pound anchovies, shrimp paste, or Thai Tom yum paste which give it a really irresistible flavor. OMG.. 😅 😅😅😁😁😁😁 Then last will be leftover rice or overnight rice.
And garnish with spring onion. Crispy and crunchy. 👍👍👍👍
I watched a lots of cooking show. It helps me to come up with a lot of new brand ideas of what to add in fried rice. When I saw Jamie add splash of water in Fried rice, I started to remember that long time ago I ever told my mom I want to add water in fried rice. I was 12 then. She want to knock my head. Nobody do that in making fried rice, she said. 😅😅😅 My grandma make fried rice a little bit different. She don't use oil. She didn't peel the garlic skin. Only smashed it once with the back of a knife, heat the wok, add rice in, with anchovies and garlic, salt. Stir fry until the rice turned dry, aromatic. And serve. We called that nasi aruk in Sarawak. Very healthy. Olden days, people cook that way. I missed her cooking. 😁 😁 😁 😁

@@TomodachiTable your very welcome😁😁😁. Actually, to prevent the rice stick to the bottom of the wok, or too burn, oil is needed, because you need to fry the ingredients like shallots and anchovies. Only very little oil for frying. You can add egg or chili. Throw the rice in and stir for a long time on a high fire until slightly smokey burnt smell comes up. Add salt or msg, and it is done.
My grandma didn't use oil. She simply throws everything and fry the rice until smokey. I can see the rice are burnt at the bottom, but still very delicious. 😁😁. Come to Sarawak one day and you guys gonna find many types of nasi Aruk here.

From what we hear it depends on the type of rice, but draining is a no-no here in Japan
@@TomodachiTable I figured it would be a no no, according to Hersha's video reacting I think it was Jamie Oliver one, she said on the instructions on whatever rice she was using, it tells you to drain it. I don't ever drain it I use dry long grain. rice.
About this draining of rice:
In western cooking it is common to use what is called `fast cook rice`. This rice is in fact pre-cooked and then dehydrated to be sold in fairly small packages in supermarkets. Instructions on the package say that you need to cook water, then add the rice and bring back to the boil. Using a large amount of water helps to keep the temperature high and thus control the cooking time but just like pasta which uses the same cooking method you have to drain it when it's done.

@@TomodachiTable Growing up with it somehow I found it confusing myself and in one of my very first cooking experiences I actually managed to undercook this type of rice even though it is supposed to be a no-brainer. Haven't used it for at least thirty years now, I mostly cook basmati or pandan rice with no particular intent to use one or the other for any particular dish. With the exception of sushi, paella and risotto, for which I do specifically select a particular (and different) type of rice because it turns out pretty bad otherwise.
It comes from a time when rice cookers where unheard of in the west. So we used a generic saucepan to boil water. Much like when cooking instant ramen.

Olive oil is the healthier choice BUT it doesnt mean you can use in such high amount & still claimed it the healthy dish =(

Olive oil has a low heating point as well, thus not suitable at all for a dish like fried rice that require high heat. The oil would evaporate before the dish is even half ready. Jamie found this out too late n him adding water directly to the pan was actually his attempt to salvage the mistake but that ended up making things worse as the rice came out too wet. The guy is just clueless.

You cannot stir fry with olive oil, too hot for olive oil it will burn.
It is true, western rice packs tell you to boil rice, drain and wash, and it makes it taste of nothing, washes away the taste.
I lived in Kobe for 1 year and now I always wash rice first, use rice cooker, only enough water to cook rice, and only use left over rice for fried rice...

Peanut oil is more healthy than Olive oil; Affordable too. Chili jam has SUGAR. And the discussion on rice can go all day. Nothing about this egg fried rice is healthy. At least genuine egg fried rice knows where it's at!

I don't put tofu when I make a fried rice at home but I usually use some sausage or meatballs, chopped them into smaller pieces and mixed them into the rice together.
Sausage or meatballs are excellent additions to fried rice :D

Chili jam is like sambal but they pour in a crapton of caster sugar as a binding agent

No. Chili jam and Sambal are different. Sambal are spicy flavor, and no look like a jam.
Sambal is not sweet but savory and rich in umami.

I'm from Toronto, Canada and next to being in Japan, I've heard that the Asian food we have here is fairly authentic, I obviously cant say for certain as I haven't been to any countries in Asia, I do know however, that what we have seems to be much better than in the United States, at least in my experience (most of the stuff from the states I had im pretty sure was cooked by white people) and with my roots being from England, I've had very good Chinese food there, and Indian. Though I think Jamie Oliver completely missed the mark with this. I don't know what was going through his head lol been loving the videos you guys make! I've just subscribed.
Olive oil has a low smoke point, as a professional chef, Jamie Oliver should know that. All the other people I've seen making fried rice, have their pans screaming hot, and olive oil would totally burn at that point.
Jamie Oliver was a tv personality not a chef. he probably cut out from school. cuz even his western cooking sucks . i love the passion he has, but some people need to realise they went wrong way in life, oliver ruin everything , it is like me having a passion for gardening, but all i plant is death in a week
I don’t think the British are using the correct rice so the water/rice ratio is incorrect. It really depends on what kind of rice you use. Some rice needs to be rinsed while others are better with the starch.
Who the fuck actually drains rice? When I did not even have rice cooker i could get it right in a saucepot. Your pour rice into colander and we are at war. I am not kidding.

Rice to me is also very filling at one dish. Maybe regular rice could be a side but not like egg fried rice. That's usually a main dish. And I use a colander only to wash the rice.
Also I work smarter, I got a rice cooker after the first time I f****d up my rice in a pan... water everywhere 🤣🤣. Rice cooker makes perfect rice every time. For whatever I want. Even has measuring on the side of the bowl for us yt folks who need it lol.
This Jamie Oliver, he only uses that type of oil (olive oil). I also have tried cooking my own fried rice (nasi goreng) I use palm oil or vegetable oil. Like I said I'm not a good cook. It's okay for me. Never forget uncle Roger white powder the MSG.
I love it when you guys go and have small comments and conversations about the video only in Japanese. As a Latino who speaks Spanish, I love seeing people from all over the world be comfortable speaking in their native language while having a laugh or two haha. So a rice packet will often tell people to boil the rice but that's for things like minute rice or uncle bens not the big bag of raw rice. Also often in the west, in US at least fried rice is seen as a side dish for Chinese take out. You buy the meal you want to eat and then get a quart or pint of rice to share with whoever you are getting food with. A lot of times my family would buy a few different things and then take a bit of each for everyone's plate.
In Western culture rice is a side dish. Doesn't matter what kind of rice it is it is a side dish in Western culture. But we too sometimes cook it as a main dish but it's mainly in the west side dish. This is interesting to see how different cultures prepare food. I can't have MSG in my rice though. Because I am allergic to MSG
