  • TESTED Drum Smoker Vs Stick Burner | Prime Rib...Its the most wonderful time of the year...to destroy some prime rib and leave your friends and family speechless! Prime Rib comes with a hefty price tag and if you don't know what you're doing, you can really set yourself up for some disappointment! We wanted to conduct a little test on two of our favorite cooking methods to see which one would produce the better prime rib. We stacked our stick burner against our drum smoker and loaded them both down with 8lbs of prime rib. While we were at it we gave away some amazing recipes for an amazing herb butter basting sauce and a horseradish cream sauce that you can dip almost anything in.     Herb Butter Basting Sauce:
    -3 Sticks of Kerry Gold Salted Butter
    -4-6 Garlic cloves crushed or pressed
    - Fresh Thyme
    - Fresh Rosemary
    -Olive Oil
    -Kosmos Q Brisket Mop
    -1 Chopstick
    -Butchers Twine/Rubber Band
    Horseradish Cream Sauce:
    -1/4 cup of Sour Cream
    -2 tbsp of Prepared Horseradish
    -One tbsp of Mustard (dijon, or something with some grit)
    -A splash of Olive Oil
    -Fresh Parsley Chopped
    -Kosmos Q Texas Beef Rub to taste

    Here is just my humble take on prime rib for Christmas. I'm just a backyard guy.
    I've been doing prime rib at Christmas for about a decadeish. I have an original cajun bandit weber conversion and I welded up a heat shield so I don't use the water pan. I usually get a 4 bone rib roast. I trim the ribs off and rub them with some home made newspaper rub (think salt n pepper and red peppers added, so black and white and red all over). Then after I trim the roast I score the fat cap which I leave at about 1/8" and rub her down. Tie her up good with butcher's twine and that roast will be perfectly round without the bones. On the bottom level of my smoker I set up a braising pan with the ribs in half red wine and water, directly above that goes the roast fat cap down. I run the pit at 300-330 and pull the roast at 120-125. Wrap and put in a cooler with a wool blanket and let rest for at least an hour. I do set up the pit with a lot of wood chunks for such a short cook, that helps with short cooks.
    The stick burner cook looked awesome. I'm getting me some stick burner envy.

    It's hard to beat a stick burner. I'm gonna have to try that sauce. I've never been a huge horseradish fan, but that sounds like a good sauce to me.

    All about air flow in the stick burner! My favorite way to cook. But some Kosmo's Dirty Bird Hot and Chili Lime Wing Dust have been a hit on the grill!

    Try doing it without the bone - I have done bone in and out many years and you get a 360 degree bark when you take the bone off.. I usually do 2 5 bone roasts.. I do take the ribs off of each and one of them I take what I call the point off which is the little flap of meat separated by the bit of fat on the skinny end on one of them.. cut that into little chunks an roll them in bacon and grill it hot - you get drop dead appetizer bites.. Use Texas beef and cow cover hot - this year will try the mop though..I like that a lot..

    Prime Rib looked awesome from both cookers!! The production and editing of this video was FANTASTIC, but that being said I love the Go Pro in your face basic videos. That style seems more “Kosmo” to me than this polished product. Just my opinion and I’m not gonna stop watching no matter the style because the content is great.

    Should've reverse seared the barrel prime rib to get a nice crust on it. The stick burner would've taken a strong second place after that reverse sear! Either way, awesome vid and comparison. Happy holidays brotha!

    Its a bummer but Hickory or Pecan doesn't grow in my neck of the woods. So fueling a stick burner is a huge question for me. I want one but is it cost effective.......The prime rib looked awesome!

    Cowboy Kent Rollins knows what’s goin on I done his oven method but right before my prime rib hit room temperature I seared the outside over fire on my pit boss then stuck it in the oven just like he done and it came out perfect, not a over cooked piece of meat on every slice was completely medium rare with just a few rare pieces in the center of the middle slices

    Good vid Bud, learned from a Live with Meathead, bone in keeps the meat from cooking evenly, this could be seen in one of the pictures...always thought bone in was the best with this cut of meat...in any event found some of your product at Buc ees in Denton, purchased a bunch of it..t
