I've tried the consent page but that appears to only register the old version of WVD apps, I've tried registering the Microsoft.DesktopVirtuilzation resource provider within Azure subscription to no avail. Any ideas? Thanks!

Make sure the filters are removed form the enterprise app view. Also, try searching for Windows virtual Desktop and Azure Virtual Desktop. Mine is listed as Windows virtual destktop. Good luck!
You can either set the exclusion tag on a specific VM or you can set the minimum percentage to include a single machine. i.e. set it to 10% if you have 10 hosts.

Don't worry, I have sorted this, should've searched via APP ID, rather than by name. It's been there all along!

You set the time in the schedule for ramp up/ramp down.
