Hi Rose, this is an older video so not sure if you are reading the comments. I love your recipes and always have great luck with them except for this one. I've tried it twice and the gravy is always cooked away and I get a dry pan after cooking. I'm going to double the amount of liquid to see if that helps and maybe turn it down to 375 instead of 400. Do you have any suggestions?

Creole seasoning is more salty. Cajun seasoning has salt, but not as much. I realized that Cajun seasoning blends better with other spices.
