- Amritsari Chicken Masala is an authentic North Indian dish, simply made in the unique Amritsar rich and tasty gravy and flavored with ginger, green chilies, onions and fresh tomatoes and seasoned with kasuri methi to enhance the flavour.
Amritsar chicken
Ingredients quantity
Chicken 600gms
Lemon juice 1no.
Ginger garlic paste 1tbps+ 1tbsp
Red chili powder 1tbsp+ 1 ½ tsp
Turmeric powder ½ tbsp
Salt to taste+ to taste
Oil 5-6 tbsp
Bay leaf 2no.
Onion chopped 3-4no.
Cumin seeds 1tsp
Tomato chopped 2no.
Coriander powder 2tbsp
Turmeric powder ½ tsp
Garam masala 1 ½ tsp
Curd ¼ cup
Ginger juliennes 1tsp
Green chilies slit 2no.
Water as required
Chopped coriander 2tsp+ 1tsp
Kasuri methi 1tsp
Method
1. In bowl add chicken, lemon juice, ginger garlic paste, red chili powder, and turmeric powder, salt to taste and marinate the chicken properly.
2. Now in a pan oil and let it heat properly, now add the marinated chicken in it and fry it properly.
3. Once it is half fried remove it from the oil and keep aside.
4. Now in same oil add bay leaf, chopped onions and sauté it till brown in color.
5. Now add cumin seeds, add ginger garlic paste and sauté it for 1-2 mins properly.
6. Now add chopped tomatoes and mix it properly,
7. Now add salt and sauté it for 2-3 mins.
8. Now add coriander powder, red chili powder, turmeric powder, garam masala and sauté it for 4-5 mins on medium flame.
9. Now add curd in the gravy, ginger juliennes, green chilies slit and mix it properly.
10. Now add fried chicken and sauté it.
11. Now add water, mix it and cook for 10-12 mins.
12. Now add chopped coriander and kasuri methi and mix well.
13. Our Amritsari chicken is ready.
14. Serve it in a bowl with rice/chapatti and garnish it with coriander.

Chef Harpal your dishes are no doubt very tempting and delicious. Pls mention whether u use Desi ghee, or vanaspati ghee or rice bran , which oil. Is it possible to get low sugar and less oil dishes but taste like Harpal Signature dishes only. Also suggest the salt (low sodium or iodised or senda/lahori salt) as most are health conscious or heart patients.
I have noted all the queries and i will keep it in mind in future...

From what I read after googling, it is supposed to be a milder version of Cinnamon..
Yes bayleaf is mild and is a great teeth cleanser, subtle flavours in the hills of HImachal and Uttarakhand people chew it in the morning as it is available in abundance.... the subtle flavours it provides specially to pulaos is amazing..
