40% sugar? Wow! Sicilians must have a really sweet tooth! When I make chocolate the absolute sweetest I can tolerate is 35%, but 25-30 is preferable. Each to their own, I suppose. The most important factor I've found is to use Criollo cocoa beans. Their flavour is so unbelievably superior to the other 2 varieties (in my opinion). Having said that, the fermentation process that the producer uses also has an effect. If your only supplier is Amazon, I would suggest going for any cocoa nibs from Peru. Peruvian suppliers tend to use 70-100% Criollo beans. For those who don't want the sugar to be crunchy, icing sugar (also called powdered sugar or confectioner's sugar in various countries) is the one to use. Or I suppose you can sit and grind your own granulated sugar into powder, but why bother?
