My favorite menu!! 😍😋 And yes, in the south we're used to the curry paste that has more yellow-ish color because we love adding turmerics and the spice is another level comparing to other parts of Thailand. I am also from the south, Koh Samui - Suratthani. I know Pai is also from the south but what province I'm not sure. Anyway, I'm a big fan of you! 😊
It's really common in Mexican cuisine for us to throw in whole spicy chilies for the same purpose as this. I'm one of those that eats those whole chilies.
I’m South Indian and my family has a similar recipe made with shark! It’s kind of flaky, spicy, and delicious, pairs well with hot rice 😋 exciting to see other dishes with the same concept!
Can you post your family recipe pls? basically south east asia such thai, laos, vietnam, malaysia, indonesia etc were all heavily influenced and followed south indian culture. en.wikipedia.org/wiki/History_of_Indian_influence_on_Southeast_Asia
This paste and lemongrass was used for a lot of smelly meat I remember, when I was really young, first time I had a grilled stingray I almost throw up haha
@@javaChai omg I’m just seeing this, but let me ask my dad! According to him it’s not a super common preparation, just something my grandma came up with, but I’d love to share ☺️
I just bought a 10 inch and a 12 inch Misen pan using your 20% off code. So 2 pans for $100.00 and free shipping. good deal. I want to try this tuna recipe. My Thai mom make similar dish using whole sardines. Delicious.
Thanks again for giving me another idea of how to make use of my red curry paste that has been sitting on the freezer for months. I hope its still good! :)
Many times I would make a quick roadside lunch using canned tuna with rice. I put crushed black pepper in the rice when cooking it and add tuna after the rice was cooked and simmer for a few minutes. I didn't have much space for condiments as I needed that for the spares I had to carry for my job. As always Pai another great video. Good luck from Queensland, Down under.
Made this tonight! This is super tasty, and super easy to make! I couldn't get palm sugar, so I subbed in brown sugar instead. Thank you so much for sharing these wonderful recipes Pai!
Wow. That chili really made your eyes water. Usually, if I can see a section of those small chilies in any Thai dish, I'll move it discretely to one side. You are so brave!
i make something similar with can tuna as well. its great as a last minute work lunch. and if you cook this longer, the chillies flavor the dish and become less spicy. or you can customize the dish and use chillies with less kick.
I rarely eat chili peppers (I like them, my stomach, not so much…), but when I do, I love them fresh and possibly ice-cold… I can’t stand wilted chili peppers… Also, I totally relate to the sentence:”chilies are hard to predict”. The spiciest chili I had in my entire life, and I’ve had even bird’s eye once by accident… was a simple green chili pepper you can find at any grocery store. Except it came from a farmer’s market, and a friend who bought an entire bag gave me one. Legend has it that my lips are still burnt off. I couldn’t feel my lips for like a whole week… from a simple chili!!!
Again: so fun to watch and such a great idea for a recipe! Some things might be difficult to find here in Germany, like those leaves. But about turmeric: I just lately found a recipe for turmeric tea by Chef Harpal Singh Sokhi from India. Never thought that turmeric could make a tea. You should be able to find it.
Germany: Lime leaves are easy to find in Asia Stores, they come frozen and you can keep them eternally in your freezer. Fresh kurkuma is available also in supermarkets.
I am a chili addict and I love it! 🥰🥰🥰 Definitely going to make this and congee 🥰🤤🤤🤤🥰 Thank you Pai 😊 Edit. I made this and it was HEAVENLY!!! God Lord it was incredible! Had it with congee. The flavours are super intense, and was off set so well with the mild gentle congee ❤
Ok, let's see: I now have a mini whisk like yours, spatula like yours, a mortar & pestle like yours, tolerance, if not love for chili like yours, but not yet the carbon steel wok. Even cooked your green curry chicken recipe last night (!). Only thing I cant do is splay the fingers & bend the wrists at angles only Thai traditional dancers can do, at a pain level only they can bear. You are such a magnificent, fun teacher, hilarious even at your own expense, and I love it. Thanks, Pai.
I have all these ingredients in my pantry and fridge right now so I'm excited to make this soon! Thank you Pai! P.S. your kitchen came out so nicely! :)
Thank you so much for suffering for our viewing pleasure!!! 🥰🥰🥰I felt the levels of burn through the screen 😹100% going to be making this one!! I have several cans of sustainably fished tuna on hand at all times, but I've skipped using them because I got tired of my go-to method of using them for tuna salad on as a salad dressing. I'll try this one with rice (and a land mine 😹) but I think I'll also use it as a salad dressing by whipping in a little Vegenaise to help coat the lettuce after it's done cooking & cooling. Thank you again for such an interesting and (practically guaranteed) tasty new meal! 😻😺😸
I can't decide if my palm sugar addiction is your fault or Marion Grasby's. Think I will let you share the blame equally. I have a HUGE disc of palm sugar that shaves with a lot of difficulty but I put a cloth on top of my knife to help the discomfort. I always wind up shaving twice what I need and just eating the rest. Damn that stuff is good.
I just checked your bio. Why did I know you live in Vancouver?! lol. I just had a feeling because Vancouver/British Columbia have a great Asian culture and food. I’m from Toronto. 🇨🇦

What kind of chili was that? I thought you were used to chilis so it must be something extra :) For me it depends on the day, sometimes I cannot eat chili without suffering, sometimes I can eat a lot. My hotest time was when I had a piri piri eating contest with a bar girl in Pattaya. She probably ate more than me but she gave up earlier than me. Her friend did not even dare to take part of the meal :)
@@zucchinigreen It did not look like a normal thai chili I think. And they have two different kinds, the one that is around 5 cm and the small piri piri that is around 2 cm. I never take away the seeds. The time with the bar girl, we ate them whole as thais can do.
I've eaten a thai chili like that once before and I guarantee I didn't have nearly half the composure Pai did afterward. Respect.
The fact that she was still able to speak and take another bite is amazing. 😅🤣

despite hating canned tuna i had to watch this video!! i love hotthaikitchen and their videos!! best cooking show ever IMO
I have made it. Unless you are very sensitive, the canned tuna flavor is overwhelmed and greatly muted by the spices.
