I watched this video a week or so ago and was very interested in the turning every minute or two. I tried this Saturday with 4 beautiful ribeyes (I trusted you). They came out beautiful, very nice sear on the outside and perfect color all the way through. My son's and mine were red and the others were pink. We did bacon wrapped asparagus in the oven and my wife made fried eggplant with a white king crab sauce to go with. I bought a Makers Mark 36" Griddle a couple weeks ago and have been watching your videos for a couple months before that. I have been going crazy with this thing. I am 71 years old and have been smoking and grilling meat and loving cooking for almost 50 years and it's been a long time since I was having this much fun cooking. Thanks for the great videos. I bought a Blackstone yesterday after watching your videos on and off for a couple of weeks. About to give it a go for the first time tonight! Got some mushrooms and onions and Rosemary and butter and shrimp and steak and zucchini, some green onions, some garlic, some bacon up, some butter, salt, pepper, beef seasoning. Crazy amount of food for my first cook, not scared though, test my boundaries, figure the process out, make better groceries week by week. Appreciate you for the inspiration to do it.

One of my favorite steak seasonings is Blues Hog Bold and Beefy; a taste of the rub reveals what I would consider as a beef bouillon cube ground up, and in the ingredients, it is listed as natural beef flavor; I really think it's beef powder and it SERIOUSLY adds another layer of flavor!

Mathew... Great job with the steak and sweet potatoes. I wish I had watched this video Friday night. I cooked NY strip steaks on my Blackstone. My wife always wants the smaller steak so hers was probably at a medium rare but she wasn't complaining even though she likes them a bit more on the rare side. As for my sons and mine they were a bit more on the thicker side like 1 1/2 to 2 inches. They all looked beautiful on the outside but mine was way rarer inside than what I like as I'm more of a well done person. For a medium to medium well at those thicknesses what would be the ideal internal temp? Also what is the best griddle surface temp for steaks? My son was OK with his, as for mine I had to take my Blackstone knife and filet my steak and pan fry the two halves on the stove take the moo out of it a bit.
Hi Charles! Usually, the person that likes their steak more rare gets the thicker piece, easier to keep it rare. But, if she don't like them large, then that's fine too. For yours, you'd need to start a little lower temp for a higher internal finish temp. For a Med/Med-well, I'd say you'd want to pull at 140-145 degrees. For your steak, you'll want to not be too high heat because your surface of the steak will be black and inside will be raw. I'd say around 400 deg, and keep flipping. May want to not have a real thick piece of meat. You could also raise the steak off the top with a bakers rack that will help cook without getting the outside black when cooking med-well steaks.
Check Hussey's channel for his NY Strip Reverse Sear video. The steaks need minimal attention and turn out fantastic. Keep the griddle temp around 350F, but use baker's racks for height and foil trays as covers during the process. A quick minute sear on each side at the end finishes the process. I've had some of my best steaks ever using this method.

Veggies are around a 355 degree mark. Steak would be around 500 degrees.
