    Please do a yum nua or neau or nuer recipe !!! Every restaurant or website I go to has a different name to the classic spicy beef salad! I wonder why that is ? ( maybe poor research on my part) Every time I make it , it doesn't taste right. I think I'm missing some true authenticity that your cooking always seems to have !!! Great looking food and recipes ! Keep it up !

      Hi - it is likely everyone making the same dish, but just spelling it differently on menu's as that is very common since Thai language doesn't truly translate to English characters. That being said, I'm sure each restaurant makes it different and every place you would go in Thailand would make it different. - ยำเนื้ (yam neuua - yet another spelling for you) - sauce varies but generally make a sauce that is equal parts fish sauce and lime juice. That is the heart of it. Majority of places you will eat this in the US though will add boat loads of sugar, so that may be more familiar, and in that case, start with lime juice and sugar, and make a dressing that is acidic but sweet enough to where it isn't as harsh as just eating lime on its own. And then add fish sauce to taste, fish sauce is being used as salt and umami, it will likely be equal parts to the lime in this case, but varies depending on the salad and how zesty your limes are.
