I remember a while ago a lot of people said there would never be a Dark type gym, because dark type pokemon use underhanded and even dishonourable tactics to fight and when you examine the dark type moves they have a point, EVERY dark type move isn't some straight forward attack, all of them have an added effect on to them that can really mess with a pokemon's means of performing.
Yet not only do we finally have a dark type gym after so many years we have one that prefers the normal way of fighting and not dynamaxing, along with the one who put his reputation as a gym leader at risk defying the chairman of the region and even ran around the entire Galar region with Hop and the MC to stop the rampaging dynamax pokemon in every city.
All that and to top it off he went out of his way to catch a Morpeko, a pokemon that his scared, frail, younger sister loved.
Piers shows just because you're a dark type user doesn't mean you're a dark-minded person.

Dark types aren't inherently evil, at least in my mind they aren't. I don't think of Dark types as evil or bad spirited, I think of Dark types as Pokemon who use any tactic they can because they realize it's more efficient to use all of their tools and their brain instead of following some code of honor that isn't even enforced.

Honestly the battle against Piers was the most intense Gym Battle. I was raising a Wooloo to beat Leon's Charizard, and he went up against Piers's Obstagoon. He won, but not without a fight. It was probably my favorite battle of the playthrough (especially because Leon's Charizard was really beaten by a Stone Edge trap from my Coalossal combined with a lucky Electro Ball from Wooloo).

I think he valued his Skuntank's Toxic/Sucker Punch combo because if you're badly poisoned, you won't want to waste time on a setup move. That way you're incentive is to be more offensive, which plays into Sucker Punch. That and his Skuntank probably also had Stench. So he's also hoping for a priority flinch to go with that badly poisoned damage.
Edit: I checked, it has Aftermath in the initial gym battle and Piers doesn't swap it out later for Stench.
