very very nice. well done. looks tasty too! i make the curry chicken similar but i like to let it fry uncovered for 5 mins at least first otherwise its more like boiled, then slowly add some water and cook covered on med heat. I also use more variety of dry and powder spices, but sometimes simple goes long way too! I do like the sauce nice and thick heavy so preference of using tomatoe paste over tomatoes for stew chicken for fried curry, ill opt for tomatoes instead of tomatoe paste. u cut the veggies very nice too, ill give a suggestion, use a longer thicker knife with a rag under cutting board, it will save u lots of time and effort with chopping veggies. thanks for share, hoping my insight will be appreciated
It is a special kind of curry used only in Sri Lanka, named Saraku. Instead of the indian yellow curry, it is brown. Might be obtained in a Sri Lankan food store. Greeting Hjalmar

Is that a different curry powder? Usually coriander powder is lightly greenish.
