That's the difference! When in Ghana I boil the chicken 1st, to tenderize. Then I re-season, flour and then fry the chicken.

Prevents the chicken from splitting in bits or sticking into the saucepan. Makes it firm and nice.
And also gives a light/ little coating to the chicken when fried..
