I will work on these videos. In the meantime I have a video on how to treat an ankle sprain that addresses ligament hypermobility that might be helpful.

I am very much hypermobile in my knees joint specially and lately my right knee has been popping and causing pain much more often than usual so I decided to try some exercising and I realised my hamstrings are as tight as they can be. I can barely sit straight with both legs straight in front of me. Guess that besides needing to work on muscle strength, I need to work on the flexibility, which doesn't really makes sense to me since my knee is always hyper extended, but it's great to find such helpful content! Thank you

This video was really helpful and I found I had to focus a lot more than when I do my usual hamstring stretches. I feel the muscles in the top of my leg (quadriceps?) are working hard too - does that mean I’m doing it wrong?

If the quads are working hard then they are helping with you maintaining your form. If it feels like they are working too hard then back off a bit from the stretch to see if that works. It isn't that you are doing it wrong it just may be a bit too much.

I have ehlers danlos and always came dead last in V sit in school. My hamstrings are impossibly tight. I can't sit straight unless I tuck my legs all the way under me which is very bad for my CVI. pts tell me i'm not trying hard enough. :/ I'll try this.
What I will say is that there's (scientific, not just anecdotal) evidence that EDS interferes with our ability to feel where our body is and the nerve signals from our muscles so we don't feel stretches even when we are stretching

Good point in talking about the specific case with EDS. "Feeling tight" and "being tight" are different. If your nerves are sensitive to stretch that can also impair your ability to 'V' sit. If you try the stretches and they don't help then consider trying nerve glides before going into the position to see if this changes things. I am sure you already know this but seek out providers who are knowledgeable in EDS for your PT care.
