    Stretched, water based dough is traditionally used for the preparation of apple strudel.
    This recipe is easy to make, but it does require some skill. The right combination of ingredients is the key. The dough should rest for at least 30 minutes before you proceed to stretch it. The best way to prevent the dough from sticking while stretching is to stretch it on the top of cotton fabric. You simply, gently stretch the dough from the center towards the edges.

    Here is the strudel dough recipe that we use in my patisserie class:
    250g Strong flour
    150g Luke warm Water
    5g Salt
    30g Oil
    20g Egg Yolk
    Knead all together to a smooth and pliable dough. It is going to be very sticky, but you cannot use any flour to dust the surface, this will dry out the dough. Knead until it clears a little.
    Brush a sheet of gladwrap with oil, and wrap the dough loosely.
    Leave in a warm place 30min. Turning every 10 min.

    I do know that the flour is very important, American flour don't work. My mom use to get so mad because it wouldn't stretch correctly, and she was a pro at strudel making in Germany, here she said the flour is processed too much.

      Yep, needs to be a higher protein flour. As for what's available in the states, King Arthur unbleached bread flour is one the best in this regard. It does make decent strudel, though maybe not up to Viennese standards. All-purpose flour won't really work.

      +Violet J I think it's sunflower oil. I just watched a video on a strudel show in Vienna and the chef said sunflower oil is used for strudels.

      +Yang Song - Hmm, thanks, that makes sense. Sunflower oil seems like it would be better for the taste of strudel than olive oil.

      ulje is oil in croatian or serbian or bosnian :) any kind in general.. i use sunflower
