    I really enjoy having idly here always but when u showed it's recipe he dint add anything extra for softness but I heard from some one that they add yeast 😮 hope you asked abt this or pls ask next time...

      Yes, for quick fermentation and soft texture. This is the secret. If you make the idli from the same batter by end of the day, it will taste very sour as yeast quickens the fermentation process.
