Semolina cake on kefir is one of the simplest, but very tasty homemade pies. It is the simplicity of the recipe and the availability of ingredients that are especially captivating when baking this magnificent pastry. Poppyseeds in this recipe give the cake an unusual and rich taste. Great dessert for tea or coffee. We need:
Semolina cake with poppyseeds
Kefir 3.2% - 400g
Semolina - 320g
Poppy - 50g
Butter - 100g
Sugar - 180g
Vanilla sugar - 8g
Lemon zest - 1 tsp
Eggs - 2 pcs
Baking Powder - 10g
Salt - 1 pinch
All ingredients must be at room temperature!
Pour semolina with kefir and leave it to swell for 20 minutes.
Pour boiling water in the poppyseeds for 20 minutes, then drain the water by placing the poppyseeds in a sieve.
Grate the lemon zest on a fine grater.
In a bowl, combine butter, sugar, vanilla sugar and lemon zest, beat with a mixer until a light mass forms. Whisking constantly, add one egg at a time, beating well after each addition. Then add swollen semolina with kefir, baking powder and salt, beat lightly with a mixer. Add prepared poppyseeds and mix thoroughly with a silicone spatula.
Line the bottom of the mold (d = 22 cm) with parchment paper, grease the sides with butter.
Put the resulting dough into a mold and evenly level along the bottom.
Bake at 180C for about 40 minutes.
