how do you lose the effects on a sample so that the "edit" sounds exactly like the sample (and not different, ie too fast, different pitch, accompanying sounds)? thanks
At 1:20 you are playing a fragment backwards. What do I press to do that? No matter what I do in Grain it seems it has no effect on the fragment I choose I can only play the entire sample
He has envelope 1 set as the motion for the sample. The bottom of the envelope is sample start, the top is sample end. A downward slope on the envelope will make the sample play backwards.

How do I preview the edits? What are you pressing to preview the changes you've made in real time?
Just press a key on your midi keyboard. Or, if you don't have one, press F4 (on Windows) to bring up the on-screen piano keys.

What are some granular VSTs with this capability do you recommend?
I would recommend Padshop Pro by Steinberg. That is my favourite granular sampler outside of reason 10
